Remember our delicious St. Paddy's day dinner that was completely free? Now you can make it yourself!
We wanted to reminisce and share our special recipe with you! You tell us all the time these sandwiches made your st. Paddy’s day great.
So from our kitchen to yours- here is the recipe for our famous Rueben’s 🍀
Ingredients:
-Rye bread (NOT marbled rye, the pumpernickel is too heavy for a Reuben)
-Russian Dressing (Thousand Island Dressing mixed with horseradish sauce to taste, you need the horseradish, even if you don't like spicy, start with a sq**rt, limit yourself to a 3:1 Thousand Island:Horseradish Sauce)
-.2lbs Corned Beef per sandwich, thinly sliced (does not need to be fancy)
-Sauerkraut (use about the same volume of kraut as corned beef)
-2 slices of Swiss cheese
-Liquid Butter
Steps:
1. Warm sauerkraut and keep warm in Crockpot (if you're making for a party)
2. Heat 2 griddles (or pans) to medium heat
3. Add corned beef directly to griddle. Put the corned beef on one slice at a time and allow wrinkles to occur between each layer so that air pockets are created in the sandwich. Keep the meat for each sandwich separate.
4. On the other griddle, brush liquid butter where the bread will go down. Place 1 slice of bread down per sandwich. Put a large dollop of Russian dressing on the bread
5. Flip corned beef, make sure it's heated through then place sauerkraut on top followed by 2 slices of Swiss cheese.
6. Put sandwich filling (corned beef and cheese) on bread on the skillet.
7. Put bread on top, brush with liquid butter, flip and let cook until bottom bread is golden brown and cheese is melted.
8. Flip sandwich out of pan so that Russian dressing is on the bottom.
9. Serve immediately or wrap tightly in tin foil.
The weather may be gloomy this holiday weekend- but that shouldn’t stop you from making a delicious, traditional sandwich at home. Pairs well with a Guinness. Cheers! 🍻
