I learned this super easy roasted sauce through my CSA years ago, and it has been one of my favorite ways to use up an overload of garden vegetables ever since. It’s especially handy when you have tomatoes, peppers, onions, garlic, and fresh herbs that need to be used before they go bad.

I wash and core the larger tomatoes, but leave cherry and grape tomatoes whole. Then I roughly chop whatever peppers, onions, and garlic I have on hand. I also like throwing in fresh herbs such as basil, oregano, sage, parsley, or celery greens—basically whatever needs to be used up.

Everything goes onto cookie sheets or into shallow roasting pans, gets tossed with olive oil, and then roasted at about 250°F for around an hour, or until the tomatoes start looking wrinkled and “pruney.” After roasting, I let everything cool, strain off the extra liquid, and save that liquid instead of throwing it away.

Then I blend the roasted vegetables in batches until they reach the consistency I want. Two trays like this gave me about 9 quarts of sauce, which I portioned into freezer bags for later.

I personally don’t add salt or pepper until I’m actually using the sauce in a recipe. That way I can season it differently depending on what I’m making.

And don’t waste that tomato liquid! I used mine as part of the vegetable stock for roasted red pepper soup the next day, with a little bouillon added for extra flavor.

This sauce is great for pasta, Italian sausage, chili, soups, and plenty of other meals. You can also change the flavor depending on how much tomato, pepper, onion, and herbs you use.

Does anyone else make a “use up everything in the garden” sauce like this?
