First day of spring, and there’s no better way to welcome it than with our spring calving herd out on fresh pasture. 🌱

This season always brings new life, fresh grass, and a reminder of why we do what we do. Watching these mama cows and calves thrive on pasture is what regenerative farming is all about—healthy animals, healthy soil, and healthy land for generations to come.

Welcome to Smoky Mountain South Polls

Owned by Mike and Susan Clark and operated by Tristan Tilley. We are proud to raise 100% grass-fed cattle with a deep commitment to the land, the animals, and the families we serve. Our farm is built on the belief that healthy soil creates healthy pastures, healthy livestock, and ultimately healthier food.

Through regenerative grazing practices, we carefully manage our cattle in ways that mimic nature—allowing grasses time to recover, improving forage diversity, and strengthening the health of our soil. This approach helps us build robust pastures, increase soil fertility, retain water more effectively, and support a thriving farm ecosystem for generations to come.

We’re not just raising cattle—we’re stewarding the land with purpose and producing nutrient-dense beef in a way that honors both nature and tradition.
