Ever wondered what tri-tip is? This triangular cut comes from the bottom sirloin, and is full of flavor!

Cook it whole on the grill, in the smoker, roast it in the oven, or slow cook like a pot roast then slice it thin against the grain. Here’s the trick: the grain changes direction, so you’ll need to turn your knife as you slice to keep every bite tender.

If you’ve been wanting to try something different, tri-tip is a good choice!

These pastas come straight from Sicily, from Nicole Doria, founder of Azienda Agricola Doria in Calatafimi. Nicole is the cousin of Gaetano, with Florida Olive Oil! We love the family connections behind the products we have here at HM.
