As I am talking to you all about chickens, I have been asked if we break it down or if the bird is whole. The $12 per bird price is for the whole bird, $15 for broken down to skin-on breasts, wings, legs with thighs and then the bones for stock.
The way I handle this as a consumer is to roast the whole bird first. That can be supper and then some good soup using the carcass, or you can pull the meat off for enchiladas, chicken salad, pulled bbq chicken, etc etc.
The video below shows what goes into actually breaking down a whole bird. Remember the demonstrator has processed 10's of 1000's of birds, but it is doable.
If you'd like us to do it, there would be an additional fee. This wasn't something we were planning on offering, but what kind of business owner would I be if I didn't explore all my options.
