Doce wine shop will be transitioning to a natural wine bar at another location soon. Taking a break to travel a bit and fix up the new space as I go.
McAllen thank you for all the support you have shown this little wine shop. From markets workshops, meetings, birthdays, engagements, dates, and gatherings. Watching people walk in and out the door these past few years has been a true blessing. Immense gratitude to be an advocate of this wine culture and have everyone respond with such a positive embrace. This new space will have a bit of both and provide you with the comfort of good wine selection and service. As I get closer to the final details I will share the destination spot to come enjoy a glass of natural wine with delicious snacks. Cheers! To new ventures 🍷

2022 Wonderland Ranch Red
Pinot Noir 50% Chardonnay 50%

Cranberry, Blood Orange, Cactus Flower

Vineyard: Chardonnay from Mason Family Vineyard in Redwood Valley, Mendocino County and Pinot Noir from Quan Vineyard in Carneros, Sonoma County. A total of 6.2 tons were harvested on 9/9/22 and 9/14/22.

Vintage: A warm winter with below-average rainfall and a cool start to spring kept the vines dormant late into March. Spring remained cool and brought moderate amounts of rain all the way to Memorial Day, keeping shoot growth fairly slow until early June. Mild summer weather contributed to slow fruit development until warmer August temperatures prevailed, pushing grapes to maturity quickly. Harvest began on August 2nd with favorable, temperate weather throughout the picking season.

Cellar: 100% destemmed berries went into two open top stainless-steel tanks. Grapes were pumped over two times per day throughout fermentation. After 14 days of skin contact, grapes were pressed. The wine aged in stainless steel for 4 months prior to bottling unfined.

Style: Light-bodied, high acid GLOU GLOU wine

Serve: Chilled

Field Recordings Pet Nat Rosé 2021 Paso Robles, California
86% Cabernet Franc, 14% Chardonnay

Crushed and left on skins for 6 hours and pressed to stainless. Fermented cold with native yeast and bottled before fermentation is complete to get just the right amount of sparkle.

Strawberries, fresh rosemary sourdough loaves, watermelon jolly rancher and a hint of jade citrus mint
