We recently got our meat bird chicks, and want to throw an opportunity out for those struggling financially in our community.

When the birds are ready to butcher, probably the middle of august, we are looking for 3-4 people to help with the butchering process. Each person will take 5 chickens home with them to feed their families.

We realize the economy is rocky and many are struggling with higher food and fuel costs. Our concern is that this economic issue could be different than most as less than 1% of our population is involved in food production, where during the Great Depression 30-40% of the population was involved in food production. The corporations will not care about you, but community works together through hardships and we want to help build community, local food production and life skills as things get tougher. As Jesus said “For I was hungry and you gave me something to eat, I was thirsty and you gave me something to drink, I was a stranger and you invited me in, I needed clothes and you clothed me, I was sick and you looked after me, I was in prison and you came to visit me.’ “He will reply, ‘Truly I tell you, whatever you did not do for one of the least of these, you did not do for me.’”

We got some new chicks this week. Picked them up from the post office and showed them to the kindergarten class at Northern Michigan Christian school. One little girl named the one she was holding “Lemon”. Unfortunately they all look so similar we can’t remember which one it is so they are all named Lemon!

The Dicksie Chicks are so spoiled! They have their own generator to keep their water from freezing in 10 degree weather after 1/2 inch of freezing rain and wind knocked out power around the area the last 2 nights.

That hasn’t stopped the Dicksie Chicks from clucking tunes and laying eggs! If you need an easy meal and can’t make it to the store we have lots of eggs available. So easy to make with no power, just whip up a camp fire and fry them over the fire!

Thanks to all the linemen working to get power back and if you need a place to warm up and a warm meal of eggs reach out!

It’s been a slow winter for the Dicksie Chicks. With the cold weather, the chicken molting process, and ordering new chicks a few weeks late, we’ve been struggling to fill everyone’s orders. But now the chickens are laying like crazy and we can’t eat them all. Please help us eat them! Let us know if you would like to be on our list or if you just want a few dozen to get you by. $3/dozen.

Here’s some ideas that require more equipment and time, but so much healthier and less costly than similar items at the store.

Chicken teriyaki snack sticks with green onion and sweet pepper inclusions. Once made just refrigerate or freeze and they can be a quick, on the go, high protein snack. This requires equipment such as a meat grinder, sausage stuffer, smoker at minimum to make but they are worth the investment.

The other is chicken deli meat with only spices and herbs and gelatin to hold it all together. This requires equipment such as a food processor or meat grinder, ham press, big pot to blanch on the stove and a meat slicer or steady hand with a knife to slice. Make it fresh every week or freeze for future use.

And still working on bone broth from the carcasses.
