Unpopular opinion: dry canning potatoes is safe and taste 1,000 times better than ones canned in water. If it’s good enough of the Amish and Mennonites, it’s good enough for me.
Here is the first round of taters are soaking to help remove some of the starch. After a good overnight soaking, they will be canned into 15 quart jars.
When dry canning, you have to scrub off ALL the dirt from the potatoes before soaking for 24 hours. In the jar, you place about a tablespoon of ghee, a little salt and paper.
