We will be back in front of Floor and Decor this weekend! Heads up, we will NOT have the jalapeño cheddar sausage this week. As you know, we grind, season, and stuff our sausage from scratch. Due to Meet the teacher and other family obligations, we were not able to get it made this week.

Yes, we know there is not a smoke ring! In order to get a good one without using sodium nitrate, we have to start with a really cold brisket. We are on a food truck. In Texas. Over 100 degrees each day. Our smoke ring will come back in the winter. It doesn’t change the flavor or texture!
