September 3rd, 2022 is the earliest note I have with Happymix Creperie’s name written on it. But the idea really began in 2019.

Kevin and I wondered why quick serve restaurants (in particular) serve sub quality ingredients. Why they up charged for alternative milk. Why we had to tip at a counter serve restaurant. Why we’d feel sick after eating out.
♡
What if… a place existed that used the good ingredients we knew and trusted? The same ingredients found in our pantry? What would that look like?

We knew Japanese crepes, ceremonial matcha, teas and smoothies were missing from the Historic Downtown McKinney square. We had hoped for years someone would come and fill the gap we saw. Until we realized… maybe we’re the someone?

Many years dreaming, planning, and saving later led us to build Happymix. Our very first restaurant! We serve organic (when possible… Nutella is simply irreplaceable y’all), dye-free, REAL food. No added yucky stuff.

Our hope is you’ll leave happier than when you first walked in our doors. 💕

📢 We’re starting an anti-counter tip revolution! You’ll never find an option to tip at Happymix. That’s a choice we made intentionally.

We knew from the start that counter service tipping wasn’t our cup of tea. (Well, tipping in general just isn’t for us.) That means the price you see is the price you pay. 😎 (Oh yeah… and we also include the tax in our advertised price.)

No awkward tablet flip. No guilt. No math. No wondering if 20%, 25%, or 30% is the “right“ answer. We just want you to enjoy our delicious crepes, incredible drinks and friendly service… all while knowing that our team is fully loved and well taken care of.

When we were given the keys to Happymix, it was a puddle of potential. The tall historic ceiling had long been covered up by sad office ceiling tiles. The floor had been covered with glue down vinyl and the space seemed so… small.
♡
But we had a vision. A bright, welcoming space where light filled the room and the smell of freshly cooked crepes spilled out into the streets. Where people could gather to celebrate special occasions or just wander in off the square to get a taste of our Japanese style crepes, smoothies, and drinks.
♡
A place where you didn’t have to worry about the ingredients because we don’t believe in cutting corners - we use fresh, organic when possible, real ingredients. (Sorry, there’s no replacement for , trust us, we searched!)

All of that… and no tipping ever allowed. Now that? That’s happy. Happymix. 💕✨ Did you know we were anti tip?⬇️

From high school sweethearts → newlyweds → new parents → losing our son, and nearly my life… now we’ve entered a new phase of our adventure: owning a restaurant! ()

Kevin’s character arc really ought to be studied. This man had never cooked a day in his life (because I LOVED to cook) then… sepsis nearly took me out. When I finally came home I couldn’t sit up, so I certainly couldn’t cook. So what did Kevin do? He taught himself.

He’s been making every meal for our family for nearly a decade now, and our favorite meal is crepes! We’ve dreamed of opening a creperie for a decade. But, that’s a crazy big dream… right? It could never come true… could it?

After countless hours designing, demoing, building, planning, testing, creating, failing, succeeding, and never giving up… we were finally able to open ‘s doors about three months ago for our soft launch.
♡
We’ve learned SOOO much in these past few past months. Like: how many gallons of milk can fit in my car’s cooler. (The number is 8 if you’re curious) 👀 How little amount of sleep we can survive off of until our body starts forcing us to sleep. (We can’t pull off more than 5 consecutive days of only 2 hours each night.) Why it’s important to buy cups in bulk (we’ve run out and had to scramble across DFW multiple times to find more.) 🤭

We’ve also learned how incredible our community is. Showing up day after day, celebrating birthdays and sharing their special moments with us. We’ve learned at juuussstt the right hour an iridescent rainbow appears in two places in our shop. 🌈 That people REALLY love our banana cloud matcha. 🍵 AND that our bathrooms… with two different colored toilets… is a delight to find. 💕💚

What an honor it’s been to serve the McKinney community for the past few months. Thank you all for the love and support. We appreciate you! And shoutout to our incredible team. We love you guys.
