4 Tamale flavors available year-round; Red Chili with Pork (mild), Green Chili with Pork (spicy), Jalapeño with Cheese (vegetarian option), and Chicken with Green Chili (mild). During December we add a 5th flavor, the “sweet ones” (de dulce); it’s more like a dessert and it has pecans and fruits. Our Green Chili to smother is spicy and it’s made from scratch with pork, roasted chilies, and spices

(sold frozen by the quart). We can also do custom orders and special requests, just give us at least one day notice on your order.

Nobody makes tamales. A tamalada makes tamales, and there is a difference. ♨️

One person cannot do it. The math does not work. Someone has to soak the husks and someone has to prepare the masa and someone has to cook and shred the filling the day before, and then the actual assembly runs like a production line with stations and a pace and a person at the end who knows how to stack them upright in the pot so they steam evenly.

The stations are assigned by ability and everyone knows where they rank. Spreading masa is the skilled position. Too thick and it is heavy, too thin and it tears, and there is always one aunt who does it in a single motion and one cousin who has been on husk duty for eleven consecutive years. The kids get folding. The kids are bad at folding. The kids fold anyway.

And it takes all day, which is the actual design. The work is slow enough that people talk, and they talk for hours, and the same stories come out every year with slight adjustments. The tamales are the reason everyone came. The stories are what they leave with. 🌽

Somewhere in every family there is a person whose masa nobody can match. Who is it in yours?
