Recipe ~ Honey Apple Turnovers

YIELD: Makes 4 servings

INGREDIENTS
1 T - dried currants
3 T - finely chopped walnuts
1/2 tsp. - ground cinnamon, plus additional for dusting
6 T - honey, divided
2 large - baking apples
2 - prepared pie dough for single-crust, purchase or homemade


DIRECTIONS
In a small bowl, combine currants, walnuts and 1/2 tsp. cinnamon. Stir in 3 T honey.
Peel apples and cut each in half lengthwise. Remove seeds and stem. Scoop out core from each half with a melon baller, making a wide hole for filling.
Divide honey mixture evenly between apple centers.
Divide pie dough into 4 balls. Roll each ball into a 6-inch circle about 1/4-inch thick. Lay 1 piece of dough over each apple half with filling-side up. Tuck and wrap dough under each apple half. Trim dough to fit. Pinch the edges of dough underneath apples to seal entirely.
Combine 1 T honey with 1 tsp. hot water. Stir until honey dissolves. Brush mixture over tops of turnovers; dust with additional cinnamon.
Transfer turnovers to an ungreased baking sheet. Bake at 375°F for about 35 minutes, until turnovers are golden.
Remove from oven and drizzle with remaining 2 T honey. Serve warm or at room temperature.

CHEWY HONEY OATMEAL COOKIES

YIELD: Makes 24 cookies

INGREDIENTS

1/2 cup - butter or margarine, softened
1/2 cup - granulated sugar
1/2 cup - honey
1 large - egg
1 tsp. - vanilla extract
1 1/2 cups - quick cooking rolled oats
1 cup - whole wheat flour
1/4 tsp. - salt
1 tsp. - ground cinnamon
1/2 tsp. - baking soda
1 cup - raisins, chocolate or butterscotch chips

DIRECTIONS

In medium bowl, beat butter with sugar until thoroughly blended. Blend in honey. Blend in egg and vanilla, mixing until smooth.

In separate bowl, mix together oats, flour, salt, cinnamon and baking soda; blend into honey mixture. Blend in raisins or chips.

Drop dough by rounded tablespoonfuls onto greased baking sheet. Bake at 350°F for 12 to 14 minutes until cookies are golden brown.

Remove from oven and allow cookies to cool 2 to 3 minutes before removing from baking sheet.

Cool completely then store in an airtight container.

TIP

High altitude adjustment: Increase oats to 2 cups and decrease whole wheat flour to 3/4 cup.

Humans have risked bee swarms for thousands of years in the hopes of collecting a little honey. Beyond its use in cooking, the substance has also been used for healing wounds and even as a natural preservative — because the insect-produced food is one of the few that rarely expires. Honey’s indefinite shelf-life is thanks to its sugar-dense composition, with less than 20% of its makeup coming from water. The nectar also has two other preserving factors: It has an acidic pH level that is unsuitable for bacteria, and its viscous state creates an oxygen barrier that prevents pathogens from growing. However, there is a catch: To maintain these properties, honey must be stored in a sealed container safe from humid conditions.
