Mead is likely humanity's first creation of alcohol. For millennia, honey has been mixed with fruit and fermented to produce wine, whether it is called "mead", "honey wine", or just "wine". Honey provides sugars and minerals and subtlety that can produce some of the finest wines on the planet.....

However..... Honey lacks some of the nutrients that yeast require to make the best wine. For this r

eason, for thousands of years, wine makers have mixed honey with small amounts of fruit and herbs to make mead. Throughout history, skillful wine makers have made some of the most subtle and profound wines, meads, in this way. Recently the advent of chemical nutrients has enabled wine makers to create meads with no fruit added. These modern "pure honey" meads can be delightful and fantastic wines. Larsen Meadworks sees itself to be in a more ancient and continuous tradition of making mead, or honey wine. Making wine from honey and fruit combined throws open the gates of creativity and innovation. The skills of a wine maker, a beer maker, and a bartender can be combined in ways to make an infinite number of hypothetical beautiful wines.
