Marl Quarry First Born. Our initial attempt to brew a hard cider. 60/40 all natural Apple and Pear juices. Brewed with a good charge of all natural local honey from Mill Creek Apiary. Primary fermentation on US04. Secondary on Champagne yeast with the honey addition. Mildly carbonated. It's a little sweeter than I was shooting for, but it is silky smooth and the honey gives it a certain warm mead like character. Tart on the front with a semi sweet finish. Will be on tap this weekend.

Black & Blue American Pale Ale. We have wild blackberries and planted blueberries here on the brewery property. Perfect time of year to brew this hot weather ale. 2 row, Munich, wheat and special roast malts. Magnum Cascade and Centenial. Heated the berries and screened them. Must went into the mash and the juice went into the fermenter during transfer. SA05 yeast. 6.98 % Perfectly balanced. Matlty on the nose. Dry but not bitter. Just a hint of the berries. It's dry and hoppy, but the berries take away some of the bitterness. The berries and the special roast malt give it an amazing ruby color. This is one of my favorite beers to brew. We grow Cascade and Centennial hops here, the water is from our artesian well and the berries are our own. This is as close to farm to glass as we can do here at Marl Quarry.

Summer Solstice traditional French Saison. We have this recipe dialed in. It's the Marl Quarry Matriarch's favorite beer. Belgian Pilsner, Gold Vienna, Cara Pils, and wheat. Cascade and Fuggles. White Labs 590. Fresh ground black peppercorns, tumeric and orange peel. We have not changed this recipe I'm years, and it comes out perfect every time. One of my most favorite beers to brew. Sitting by the lake on the brewery property, enjoying a hot July afternoon.

Better Half Belgian Tripel is back on tap at Marl Quarry. 2 row, vienna and crystal 10 Made our own Belgian candied sugar from organic pure cane. Moved it to the end of the boil. Changed the yeast to LAL Abbey Yeast. Came out fantastic. 6.9%. Soft, smooth and loaded with Carmel notes. Really like this version. This might be our final spin on the Tripel. Stay tuned, two more releases this weekend.

Summer Crush is back on tap. Graf ale brewed with equal parts grain and fruit. Did it a little differently this time. In previous versions we puréed fresh fruit and put it into the mash. This time around we juiced fresh Granny Smith apples and Bosc Pears. We brewed the ale first. 2 row, Belgian Pilsner and wheat. Cascade and centennial. One week on US05 yeast. Added the apple pear juice to secondary fermentation with D47 white wine yeast for another week. FG at 1.002 and 4.98%. Super dry, tart, crisp summer crusher. The white wine yeast really dries it out. Light and refreshing. Perfect summer beer. Stay tuned, we have three more beers coming on this weekend.

Proud and honored to be the brewery for the 2025 McAuliffe Saint Patrick's party last night. This is our fourth year brewing the McStout. Same recipe and it was as great as we had hoped. We got to introduce a bunch of people who had never tasted our beers before to our McStout. Best comment of the night "This is better than Guinness" I'm not gonna lie, I love Guinness, and I've toured the brewery at Saint James Gate, but that might have best comment I've ever heard regarding one of our beers. Happy Saint Patrick's Day!! Slainte! Daniel McAuliffe
