Cheddar-Stuffed Meatloaf Morsels

Looking for bite-sized, cheesy meatloaf perfection?

Ingredients
- Ground beef
- Ground pork
- Breadcrumbs
- Egg
- Garlic, minced
- Onion, finely chopped
- Salt
- Black pepper
- Worcestershire sauce
- Ketchup
- Dijon mustard
- Cheddar cheese, cut into small cubes
- Fresh parsley, chopped (optional)

Directions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine ground beef, ground pork, breadcrumbs, egg, minced garlic, chopped onion, salt, black pepper, Worcestershire sauce, ketchup, and Dijon mustard. Mix until well combined.
3. Take a small portion of the meat mixture and flatten it in your hand.
4. Place a cube of cheddar cheese in the center and mold the meat around it, ensuring the cheese is completely enclosed. Repeat with the remaining mixture and cheese cubes.
5. Place the stuffed meatloaf morsels on the prepared baking sheet, spacing them evenly.

Directions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.

Ingredients
- White fish fillets (cod or haddock)
- All-purpose flour
- Baking powder
- Cold beer or sparkling water
- Salt
- Black pepper
- Vegetable oil for frying
- Potatoes, cut into fries
- Lemon wedges
- Tartare sauce (optional)
- Fresh parsley, chopped (optional)

Directions
1. Preheat your oven to 200°F (95°C) to keep fries warm.
2. In a large bowl, mix 1 cup all-purpose flour, 1 teaspoon baking powder, 1 teaspoon salt, and ½ teaspoon black pepper.

- 1 cup heavy cream

- 1/4 cup sour cream
- 2 tablespoons flour (optional, for thickening)

Directions:

Spiced Christmas Jam

Get into the holiday spirit with this warm, spiced jam! 🎄🍓

Ingredients:
- 2 cups strawberries, hulled and chopped
- 2 cups cranberries, fresh or frozen
- 1 apple, peeled, cored, and diced
- 1/4 cup orange juice
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 3 cups granulated sugar
- 1 packet (1.75 oz) fruit pectin

Directions:
1. In a large pot, combine strawberries, cranberries, apple, orange juice, lemon juice, cinnamon, ginger, cloves, and nutmeg.
2. Cook over medium heat, stirring occasionally, until the fruit is softened and the cranberries start to pop, about 10 minutes.
3. Use an immersion blender or mash the fruit with a potato masher to your desired consistency.
4. Stir in the fruit pectin and bring the mixture to a rolling boil.
5. Add the sugar all at once, stirring constantly. Return to a rolling boil and boil for 1-2 minutes, or until the jam thickens.
6. Remove from heat and skim off any foam if necessary.
7. Ladle the hot jam into sterilized jars, leaving 1/4 inch of headspace. Wipe the rims clean and seal with lids.
8. Process the jars in a boiling water bath for 10 minutes to preserve, or store the jam in the refrigerator if using soon.
9. Let the jam cool completely before serving.
