Well to say I have missed y’all would be the understatement of the year! I truly have and because of it I have been eagerly awaiting the chance to make some delicious treats for everyone!

Things have been going well and Hubby and I have had an exciting several months marked with so many blessings; not the least of which was the addition of a new granddaughter to our tribe! Y’all she is SO precious that I just can’t stand it!

But without any further delay, these are some of the most popular and widely requested offerings from over the years that will hopefully bring your family as much Christmas joy as they bring mine!

And speaking of joy, Hubby and I have been talking about doing a once monthly offering menu just because we both miss y’all so very much! So stay tuned!

SMOKY CHICKEN SLIDERS

Smoky pulled chicken and hickory bacon covered in melted provolone and served on soft, sweet Hawaiian slider buns. Every order comes with my homemade, Alabama, white BBQ sauce…perfect for dipping these smoky little treats!
These are always a huge hit at every get-together and a perfect holiday celebration “finger food”!

SHRIMP SCAMPI DIP

If I had to choose between a shrimp scampi pasta dish or this dip… I would choose this dip EVERY time; hands down. Because you get tons of creaminess and cheesy deliciousness with the dip, that you just don’t get with the pasta version. And that little hint of garlic…I am obsessed!
We tried this hot and bubbly, right out of the oven…and kept right on eating it once it had cooled.
I honestly can’t decide which way I like it more because it was delicious both ways. So I’ll leave it up to y’all to decide for yourselves.
This is a decadent and wonderful treat any time of year, but truly wonderful as a holiday offering!

CINNAMON FRENCH TOAST BAKE

Cinnamon, brown sugar and buttery French bread, combined with some holiday magic, make this an amazing treat for the whole family! It almost feels like you’re eating dessert for breakfast because as it bakes the cinnamon-sugar top caramelizes and gets slightly crispy while the inside stays soft and wonderful as the cinnamon and maple syrup infused custard works that “magic”!

ROTEL, SAUSAGE & HASHBROWN BREAKFAST CASSEROLE

One thing I love to do for Christmas morning is to have some breakfast casseroles ready to pop into the oven while we open presents. That way when the dust settles, the wrapping paper has been picked up and everyone starts wandering into the kitchen…voila, breakfast is ready!
Hashbrown potatoes, breakfast sausage, rotel, green chilies and plenty of cheddar cheese combined with cream cheese, eggs and a wonderful combination of spices that make this a truly comforting and delicious breakfast treat that honestly, can be enjoyed ANY time of day! Delicious!

GROWN-UP CHICKEN SALAD

I debated for a moment if I wanted to keep this on the Christmas menu, then it occurred to me that I literally have this out with crackers and chips for snacking in my own home every holiday…so of course I’m going to offer it! And what a satisfying, wonderful snack it is!

Delicious, creamy, white meat chicken salad is wonderful…BUT…add some toasted pecans, red grapes (and a couple of secret ingredients of my own); and we’re talking about “next level” goodness! Great on salad, crackers, or all by itself; this is one of my all-time favorites! (**Note: Contains nuts**)

TRADITIONAL SHRIMP SALAD

A pound of plump tender shrimp, and diced celery tossed in my own “from scratch” Chesapeake sauce. This is a staple in our fridge and is great on a sandwich (or as a keto, lettuce wrap), on a salad or right out of the container with a fork!
The only problem is that it never lasts long! (Note: This is a Keto-friendly option!)

OLD FASHIONED CHOCOLATE PIE **Limited Quantities**
Chocolate pie

Sweet, simple, super chocolatey, creamy-smooth and decadent!
When a classic like this is made from scratch, by hand and with love…you can taste the difference. I swear, my Hubby would eat a slice of this every day and never get bored (and honestly, I could too!)

Hey yall! Just wanted to say hello and that I miss you all so much!

Here’s a delicious and easy meal. I made this for dinner tonight with a simple salad and it was delicious as always. Let me know if you try it! ❤️😘

2 (10.5-ounce) can cream of chicken soup
2 cups chicken broth
2 cups instant rice
1 (2-ounce) package onion soup mix (such as Lipton)
4 -6 boneless, skinless chicken breasts or thighs
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Add the cream of chicken soups, and broth to the baking dish and whisk together until combined. Stir in the rice and seasonings.
Nestle the chicken into the rice mixture. Sprinkle theonion soup mix evenly over the chicken. Cover with aluminum foil.
Bake until the chicken is cooked through, or an instant-read thermometer registers 160°F when inserted into the thickest part of the chicken (the temperature of the chicken will continue to rise to 165°F as it rests), and the rice is tender, 50 to 60 minutes.
Remove from the oven and let rest for 5 minutes.
Store leftovers in an airtight container in the refrigerator for up to 3 days.

Happy Sunday, y’all!

I hope everyone is having a wonderful and relaxing weekend. I know we needed this rain for sure!

Sadly, our summer with our granddaughter came to a close and we had to take her home. It was a very long trip and we had almost no time in which to make it happen but Hubby was a trooper and managed the 24 hour, round-trip drive in just over 2 days.
We miss her already and we hope she has many wonderful memories to cherish. I know we do! 😊

During the ride and over the last weeks and months, we have spent much time in discussion and prayer regarding the future of Casserole Connection. When I initially started the business it was during a time of limited travel and was a welcome relief to many people in search of something like what I had to offer. I was one of very few people offering this service and quality, and I was blown away by how warmly it was received by everyone.
But as prices have continued to climb, others have entered the market space and quality ingredients have become increasingly difficult to source; the challenges I face week to week have increased exponentially. To the extent that the time I spend trying to cover all of these issues has turned into such a large number, that quite frankly what I have to show for it at the end of the week simply isn’t worth the incredible amount of time and expense.
Additionally, the added time leaves me with little to no time to rest, be with my family, keep up with my home or practice my faith as I believe I should. To the extent that I had to ask myself if the pursuit of success was worth feeling like a failure in the areas of my life that mean the most to me.
So I prayed with my whole heart that the Father guide me…and as if in answer, I got a call for a position with a local school, preparing meals for the children. While I know I won’t make much of a living doing this, I also know that the weight of the world seems to have been lifted from my shoulders. I feel like I can breathe a little and after being under constant pressure for so long the relief I feel is truly a blessing from above!
“For I know the plans I have for you,” declares the LORD, “plans to prosper you and not to harm you, plans to give you hope and a future. Then you will call on me and come and pray to me, and I will listen to you. You will seek me and find me when you seek me with all your heart. - Jeremiah 29:11-13
Does this mean I won’t make and offer wonderful, tasty and wholesome dishes and treats from time to time? Of course not! Let’s not get crazy…LOL!! 😊 But what it does mean is that it will give me an opportunity to do some private chef work, unique meal prep and to put all of the fun, joy and love back into the offerings I will have in the future. Because as I said from day one, “If I can’t give y’all the very best, I’m not going to offer it to y’all!”

So please keep an eye out for future pop-up offerings and fun things I will make available. (Especially around the holidays!)

Hubby and I want to thank y’all for being such a blessing to us and to thank y’all once again for all of the love we have received as well as the many bonds of friendship we have formed with everyone. We truly love and appreciate each and every one of you!

This weeks offerings (7/21 – 7/25)
Happy Sunday, y’all!

Congrats to Nina Barnes on winning the Smith Island Cake give-away last week. Apologies but we had some technical difficulty uploading the video of the drawing.

At the end of this week I will be heading to take our granddaughter home.
She has been out swimming on the lake almost daily with me, her Poppop and Uncle and her love of swimming is second to none!
And as much as we hate to see her go, I know her parents miss her terribly and need to get her on a solid routine before she starts back to school next month. We are so grateful to have spent some of the summer with her and we hope it has been filled with wonderful memories she will cherish as much as we will.
Since it is such a long trip and because I will need to make a quick turn-around, this weeks offerings menu as well as delivery bandwidth will be scaled down slightly to make sure I can accommodate everyone. So unfortunately, there will be no Friday deliveries or pickups; everything will be done Thursday.

This south of the border dish has tender chicken, layered in soft tortillas and a creamy sauce that has a little kick from ro-tel, peppers and onions. Finished with a topping of cheese and baked together onto delicious goodness. I’m a huge fan of Tex-mex flavors and this dish pulls them all together perfectly!

This decadent, cheesy, baked ravioli has 4 kinds of cheese, and no shortage of flavor! I warn y’all, this isn’t just any ol’ ravioli, when it’s “Million Dollar”, you KNOW it’s going to be good!
