Day 1511 of being stuck in the house due to snow and ice, and the people want blueberry muffins. Let’s make them!
These muffins came out really good and the family loved the crumble on top!
And yes, I’m wearing my Christmas onesie since this ice storm has turned into winter break 2.0.
Muffin
2 1/2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/8 salt
1/2 cup unsalted butter (melted)
1 cup sugar
2 eggs room temperature
1 cup buttermilk
1/4 cup sour cream
1 TBS vanilla extract
2 TBS vegetable oil
Crumble
1/2 cup flour
2 TBS cornstarch
6 TBS salted butter (melted)
1/4 cup light brown sugar
1/5 cup granulated sugar
Bake on 425 degrees for first 5 minutes then 375 degrees for the remaining 15 minutes. Let them cool before eating…unlike the people in my house 😁
