If you think you have it rough in 2026, but have never had to do what you grandparents and great grandparents had to do to get every edible scrap they could out of the animals they ate, then you're full of s**t. But if you did have to do that, you'd realize how good it really was. Because they didn't have the luxury of turning up their noses, they were privaleged to eat the best of the best.
The Jewish name is Helzel. Your depression era American ancestors called it Stuffed Goose Neck. Everyone called it faux sausage, because animal intestines weren't available on a daily basis. But geese could almost feed themselves.
When you're hard up enough to start stuffing and eating goose and chicken necks, cow stomachs and lungs, and sheep intestines become a tradeable commodity for you, come back and tell me how rough you have it. You'll know you have it rough, when you start eating really well.
