Not one of my words is lost to you, God.
Humbling myself, I accept Your invitation to draw near to the throne of grace.
I sit in Your presence and find assurance in Your listening ear.
My questions do not exhaust You.
You do not take my lament lightly.
My frustrations do not puzzle You.
My requests do not exasperate You.
You are not uninterested in my life.
No ... You listen to every word with interest and investment.

Homemade cinnamon apple sauce:

8 apples of your choice (we used snapdragons)
1 tbsp. Of sugar
2 tbsp. Of cinnamon
1 1/2 cups water

Chop apples and core them. We leave skins in for more flavor. Mix all ingredients in big pot and bring to a boil. The smaller the apple pieces, the faster it will boil. It took us a good 45 minutes until they were softened. Use masher or immersion blender to blend. A great healthy dessert!

Turkey kielbasa with veggies

1 pound of red potatoes
2 - 13 oz packages of Turkey kielbasa
1/2 cup Of olive oil
1 stick of butter
4 cloves of garlic, cut coarsely
2 tbsp. Parsley
1 red onion cut coarsely
2 red peppers, cut in rings
Himalayan or sea salt
1/4 tsp. Thyme
1/2 tsp. Onion powder
1/2 tsp.Garlic powder
Pepper to taste
1 tbsp. Paprika

Preheat oven to 375°.

1. Cut potatoes 1/4" thick
Cut kielbasa in 1/2" thick

2. In a large bowl, add kielbasa, potatoes, onions, garlic, sprinkle with salt and pepper to taste. Also add garlic powder and onion powder with olive oil. Mix well and spread onto baking sheet. Top with parsley, paprika, and thyme.

Bake for 40 minutes or until potatoes are soft..

We served ours with French style green beans.

Amish Casserole

16 oz. Of uncooked pasta
1 tbsp. Olive oil
1 onion chopped
1.5 lbs. Of ground beef
1/2 garlic powder
1 can tomato soup
1 can of cream of mushroom soup
1 cup milk
1 tbsp. Paprika
1/2 tsp. Dried parsley

Heat oven to 350°.

Cook pasta, in large pot (follow directions on box).

Meanwhile, saute onion in olive oil until soft, add ground beef and cook until beef is cooked through.

When pasta is done, drain it, add back to pot.
Add cooked beef, tomato soup, cream of mushroom soup, garlic powder to pasta (1/2 of paprika to pasta)-stir through. Season with salt and pepper.

Transfer to baking dish, sprayed with olive oil cooking spray, sprinkle with rest of paprika and parsley.

Bake 25 minutes.

Beans and Ham. Keto/Gluten Free/High Protein/Low Sodium

1 pkg Cube Ham
1 pkg Lentils
1 pkg Black Eyed Peas
2 Cubes Chicken Bouillon (or beef if you prefer)

Soak beans over night. Drain and rinse then put in crockpot with Ham and 2 cubes of chicken bouillon and enough water to cover beans by 2 inch. Cook on High for 4 hours. Adding water as needed.
Serve with shredded cheddar or mozzarella!
Salt n' Peppa to taste

Mama's American Goulash

A nice and easy meal for you busy ones!

1.25 lbs. Ground beef
1-1.5 cups chopped yellow
1 green pepper
7 cloves of garlic
1 (28 oz) can diced tomatoes
1 cup of organic beef broth (or regular if you prefer)
1/2 tsp. Salt
1/2 tsp. Pepper
1 tsp. Italian Seasoning
1 tea spoon of cane sugar
1 tbsp. Worcester Sauce
1 bay leaf
1 1/4 cups elbow macaroni
1 1/2 cups of cheddar cheese
Parsley to garnish

Directions:

In a big pot, over medium high heat, cook brown beef, onion, green pepper until beef is no longer pink. Drain off grease.

Add garlic and cook about 30 seconds. Add diced tomatoes, 15 oz tomato sauce, beef broth, salt, pepper, Italian seasoning, sugar, Worcestershire Sauce and bay leaf. Stir to combine together.

Bring to a low boil and add elbow macaroni. Stir to combine together. Cover and simmer for 15 minutes or until pasta is cooked. Remove from heat and discard bay leaf. Stir in cheese until melted.

Garnish with parsley.

Amish Poor Man's Hamburger Steaks

2 pounds ground beef
1 cup milk
1/2 tsp Italian Seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 tsp. Cayenne
1 tsp. Parsley
All-purpose flour for dredging
Kosher salt and pepper to taste

Gravy:
2 (10.75 oz) cans condensed cream of mushroom soup
1 1/2 cups whole milk
1 1/2 tablespoons of parsley
8 oz mushrooms

Preheat oven to 350° and grease a 9 X 13 baking dish with non-stick spray.
In medium bowl, whisk together cream of mushroom soup, whole milk, then stir in parsley. Set aside.
In separate large bowl, combine ground beef, crushed saltines, milk, Italian seasoning, garlic and onion powders, cayenne, then season liberally with salt and pepper.
Using your hands or two forks, combine ingredients until well mixed. Gently form into even sized patties.
Place 1 cup flour (or more, as needed) in a shallow dish and dredge patties.
Heat a large skillet over medium-high heat with a splash of olive oil and once very hot, brown patties on both sides until golden brown. You may need to work in batches. Insides will still be undercooked.
Remove beef patties and saute mushrooms in butter for about 5 minutes.
Transfer browned patties and mushrooms to greased baking dish, then evenly top with gravy and cover with aluminum foil.
Place baking dish in oven and bake for 30 minutes, remove aluminum foil and bake another 10 minutes.

Great served over egg noodles!
