A little NC Oyster history…

For a stretch of years, some of the hardest work on the North Carolina coast happened standing up, indoors, in the cold, with a knife. 🦪

The oyster canning houses ran through the winter months in Carteret, Hyde, Pamlico and Brunswick counties, wherever there was a dock and a bed of shell close enough to work. Boats came in loaded, the oysters went onto the tables, and rows of shuckers stood at zinc topped benches opening them one at a time with a short curved knife and a lot of wrist. Pay was by the gallon. A fast shucker was a genuinely valuable person and everybody in the room knew who they were.

It was cold, wet, loud work with hands that never fully healed between seasons. Women made up much of the shucking floor and children were on it too, for a long time, which is part of the record. What came out the other end was hand soldered cans of North Carolina oysters going out by rail to cities that had no idea where the sound country even was. 🚢

The shell piles behind those houses got enormous. Some of them were burned for lime, some got spread on roads, and driving certain lanes down east you are still driving on somebody's oyster season from ninety years ago.

The canneries mostly closed as the beds thinned and the market shifted. The docks are quiet now, but the shell is still under everything.
