Santiago Salgado is an artist who took refuge in Mendoza, Argentina 🇦🇷to connect with the earth 🌱and to study oenology and viticulture at the local university. This training gives technical excellence to his products. However, the characteristic of this winemaker is to make "wines that go against the grain", unique wines 🍷, with their own identity.

He chooses not to use preservatives or stabilizers and loves to experiment with exotic grapes such as Gamay, Tannat, Ancellota, Caladoc, Corvina, Croatina, Nero d'Avola, Verdicchio, Dolcetto, Fer, Cinnamon, Patricia, Empress, Carignan, Cherry.

“Fer”, like the French word for iron, is the name of a wild red grape 🍇 from southwest France 🇫🇷. The name refers to the hardness of the vine’s wood and to the soil it grows in with high levels of iron.

Called Brocol in Gaillac and Pinenc in Madiran, it can add some rustic, smoky flavours to a blend. 🍷

Fer itself is quite tannic and acidic, with a medium body and notes of tart cherries, cranberries and blackberries. Fer from Gaillac has a heavier body with more smoky, complex and dark fruit notes. 😍

Wine aerators are devices that allow the injection of air into a wine, which helps to enhance the aromatic and taste characteristics of a particular fermentation.

⚠️ It is important to say it: they do not improve the quality of a wine, but simply help to open it. Also, not all wines benefit from an aerator: varietal wines, for example, full of fruity, floral or herbaceous aromas, can lose these nuances during the process just like the older ones.

The Chardonnay grape, originally from Burgundy 🇫🇷, offers a dry, powerful, fruity wine with good acidity.

They are pale, golden yellow in color with greenish highlights.

When they are produced in cold climates ❄️, their acidity is notable with aromas of citrus, pear and acacia. On the other hand, when produced in warm weather 🔥, the aromas are of tropical fruits such as mango, pineapple, banana, melon or pineapple.

Regarding its aging, young wines are ready to serve as soon as they are opened, offering aromas of green apple. With oak aging, it is better to wait an hour before serving and enjoy its aromas of vanilla, honey and butter.

Practice makes perfect, but there are a few things we can keep in mind.

👁 Use the eyes: the color indicates the age of the wine, a bright cherry-colored wine is a young wine and an opaque garnet wine is an aged wine.

👃 Smell and aerate to discover different types of aroma: the grape itself, those that are produced in fermentation and finally those that we call bouquet that develop during the aging of the wine.

👅 Taste it and move the wine in your mouth so that the tongue picks up the basic flavors (salty, sweet, sour and bitter) and the texture of the liquid.

Once you swallow it, exhale the air through your nose, and feel the sensation it has left in your mouth 👄

Tip and warning! Move the wine slightly and observe how the drops slide down the glass: the slower they fall, the higher the density and alcohol content. 😉

We all know that the color depends on the grape used to produce the wine. Besides this, its color depends on anthocyanins, which are molecules that are in the skin of grapes:

For example, to create white 🤍 wines, the skin of the grapes is separated from the wort before fermentation.

For orange 🧡 wines, oxidation of the grape skin is allowed to generate a more orange appearance. These wines tend to be more rustic, inspired by an ancient style that has gained recognition in recent years.

The production of red❤️ wines also maintains the skin of the grapes during fermentation to increase the intensity of the color. Once this stage is finished, some wines are filtered.

Rosé 💗wines are a mixture: they are produced with red grapes, but they use a similar process of white wine making.

🍇 Malbec has a fruity flavor and aromas when it is young and when it ages it evolves into aromas of cinnamon and hints of vanilla. It is a wine with structure and a very intense,dark color. Its flavors are warm, smooth and with very pleasant, sweet tannins.

The Malbec grape is native to France 🇫🇷 in the Cahors region, where it was called Cot, but currently more than 75% of the world production of Malbec is done in Argentina 🇦🇷. In fact, Malbec Luján de Cuyo is the first Denomination of Origin (DOC) in America. Chile 🇨🇱, South Africa 🇿🇦, Australia 🇦🇮 and France are also producers of this grape.

Chateau Mouton Rothschild was apparently the first winery to stamp a work of art on a wine label and turned that great idea into a tradition for every harvest. Dalí, Braque, Miró, Kandisnski and Picasso collaborated with this winery, from the Bordeaux area, to create a trend that continues to this day.

The economic effect of this creative idea was evident for many other wineries that copied and expanded the proposal of art on their labels towards new and delicate horizons: few things define the purchase of a bottle of wine as much as a good label.

At present, the reorientation of wine towards new young audiences also strengthened the renewal of aesthetics and narratives around this delicious drink that is now forever associated with art.
