Beef broth bowls took over FoodTok: crispy ground beef and rice with a creamy coconut curry broth poured over the top. Our meal-prep version uses 93% lean beef and mushrooms, with no sesame oil. Heads up: a lot of red curry pastes list soybean or canola oil, so read the label. Keep the broth in a jar, reheat, pour. That pour never gets old.
VIRAL BEEF BROTH BOWLS (serves 4)
β’ 1Β½ lb 93% lean ground beef
β’ 8 oz cremini mushrooms, sliced
β’ 2 tsp avocado oil
β’ 3 tbsp soy sauce or tamari + 1 tbsp honey + 2 tsp cornstarch

β’ 2 tbsp red curry paste (no oil on the label) + 1 tsp curry powder
β’ Β½ cup canned coconut milk + 2 cups low-sodium beef broth
β’ 1 lime
β’ 2 cups cooked jasmine rice
β’ 2 cups diced cucumber, plus scallions + cilantro
1. Avocado oil, high heat: press the beef flat and don't touch it for 3β4 min. Flip, break it up, cook through.
2. Add the mushrooms and brown them, 4β5 min.
3. Whisk the soy sauce, honey, cornstarch and a splash of broth. Add half the garlic and ginger, pour in the glaze, toss 1β2 min until glossy. Remove.
4. Same pan, low heat: add the rest of the garlic and ginger, then the curry paste and curry powder. Cook 1 min.
5. Add the coconut milk and broth, scrape up the browned bits, and simmer 3 min. Finish with lime juice.
6. Rice + beef in 4 boxes, broth in 4 jars, cucumber and herbs on the side. Fridge 3β4 days. Reheat the broth and pour it over.
