Have you ever tasted Γ–kΓΌzgΓΆzΓΌ?
Yes, I need to practice pronouncing it. Tasting it β€” that was the easy part!!

Merve, one of our L3 students from Turkey, introduced me to this grape β€” grown in Elazığ, high up in Southeastern Anatolia.
Turkey = warm climate, but that altitude gives serious Pinot Noir energy: fresh, high acidity, firm tannins.

Pairing? Turkish Kebab, obviously.

First - we eat!
Day 2 of WSET Level 2 in Macedonia started how I promised my students β€” with burek.

For anyone who doesn't know: burek is a traditional Balkan pastry, layered and stuffed with cheese or meat. Rich, fatty, worth every bite.

But here's the lesson β€” in the Balkans, we eat burek with yogurt. That's not just tradition, it's technique!
Yogurt's acidity cuts through the richness and cleanses the palate.

Same principle applies to wine and any rich food β€” a high-acid white like Riesling or Sauvignon Blanc does the same job.

Argon gas capsule is too small, the canister is just right!

And this is one of the lessons: argon gas and blanket systems preserve wine.
So: we are going to open a lot of wine during our L2 and L3 sessions, and we want our wine samples nice and fresh, preserving their distinctive aromas. Hey, we are teaching here!
