Got lunch? Today’s Bini bowl is a food fiesta of a bowl featuring a pesto of almonds, cilantro and jalapeño (for extra protein, and from one of my favorite cookbooks Whole Bowls by Allison Day.) Salads and soups will still be posted for your copying pleasure. But I have to bid farewell to my Sunday Soup-erstars!
It has been such a great pleasure to nourish and cook for all of you throughout the pandemic and beyond. Your love letters and the creative ways you served my soups and salads to your families was heartwarming. I loved all of your photos, I loved sharing recipes, and I loved teaching you how digestion, absorption and metabolism of all of these healthy meals involves so much more than food.
As an Exercise Physiologist, Functional Nutrition Consultant and Food Sensitivity Specialist, I have always been asked about what I eat, where I eat, how I cook and enjoy my meals, maintain my health and weight. So I made it my mission to demonstrate the importance of:
1-Eating a largely plant based diet
2-Including 8-10 servings of fruits and veggies daily
3-In a rainbow of colors, varying your rainbow from day today to provide adequate fiber, vitamins, minerals, antioxidants (especially bitter green veggies to promote digestive enzymes and encourage of the liver to do it’s most important job- detoxify!)
4-Including fermented foods to support gut flora
5-Including quality fats for their anti-inflammatory properties (fat from olives, avocados, nuts, seeds, fish)
6-Including protein with EVERY meal for tissue growth and repair
7-When we include complex carbohydrates, they should be WHOLE GRAIN
Sunday Soups gave me the opportunity to create complementary recipes that together encompassed these nutritious ideals. I supported the community by using seasonal, organic, locally grown produce, and delivered each package personally. It was a special way of connecting during a time when we all needed that human touch, attention and connection— including myself!
I have a platform that I plan to maintain, to stay connected and to continue to keep you abreast of current health trends and research, and my new projects! Together in health, Bini
