🍫🍌🥞 Fluffy Chocolate Banana Sourdough Pancakes
This morning’s breakfast: fluffy homemade chocolate sourdough pancakes with caramelized banana slices cooked right into them. ❤️
The secret? Instead of mixing banana into the batter, I place fresh banana slices directly on the hot skillet and cook them with the chocolate sourdough pancake batter. The bananas become warm and caramelized while the pancakes stay beautifully fluffy.

🥞 Makes about 9–12 pancakes
Ingredients • 1 cup (240 g) sourdough starter or discard
• 1 cup (125 g) bread flour
• ¼ cup (25 g) unsweetened cocoa powder
• 1½ tsp baking powder
• ½ tsp baking soda
• ¼ tsp salt
• 1 large egg
• ¾ cup (180 ml) milk, plus more if needed
• 2 tbsp melted butter or avocado oil
• 1 tsp vanilla extract
• 2–3 tbsp maple syrup or honey
• ⅓ cup chocolate chips, optional
• Fresh banana, sliced into rounds
How to make them
Whisk together the sourdough starter, egg, milk, melted butter or oil, vanilla and maple syrup or honey.
In a separate bowl, whisk together the bread flour, cocoa powder, baking powder, baking soda and salt.
Gently fold the dry ingredients into the wet ingredients until just combined. A few lumps are perfectly fine—don't overmix.
Fold in chocolate chips if using, then let the batter rest for 10–15 minutes.
Heat a lightly greased skillet or griddle over medium-low heat.
Arrange a few banana slices directly on the hot skillet and let them begin to caramelize.
Pour about ¼ cup of chocolate sourdough batter over and around the banana slices.
Cook for about 2–3 minutes, until bubbles appear and the edges begin to set. Flip gently and cook for another 1–2 minutes.
✨ Fluffy pancake tip: Bread flour absorbs more liquid than all-purpose flour. Your batter should be thick and scoopable but still slowly pourable. If it's too thick, add milk 1 tablespoon at a time.
I served mine with more banana, blueberries, scrambled eggs and a little drizzle of sweetness. 😋
