🍍🍰 Mini Pineapple Upside-Down Cheesecakes
These adorable mini cheesecakes combine a buttery graham cracker crust, rich and creamy cheesecake filling, sweet pineapple, and a luscious caramel drizzle. They're the perfect bite-sized dessert for parties, holidays, or whenever you're craving a tropical treat!
🛒 Ingredients
For the Crust
1½ cups graham cracker crumbs
¼ cup unsalted butter, melted
For the Cheesecake Filling
2 packages (8 oz each) cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
For the Topping
1 can (20 oz) pineapple chunks, well drained
¼ cup caramel sauce
Optional Garnish
Whipped cream
Fresh mint leaves
Maraschino cherries

Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
In a medium bowl, mix the graham cracker crumbs with the melted butter until evenly coated.
Divide the crumb mixture among the muffin cups and press firmly into the bottom of each liner to create the crust.
In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Spoon the cheesecake batter evenly over the prepared crusts, filling each cup about three-quarters full.
Place a few pineapple chunks on top of each cheesecake, gently pressing them into the batter.
Bake for 20–25 minutes, or until the centers are just set.
Allow the cheesecakes to cool completely, then refrigerate for at least 2 hours until fully chilled.
Before serving, drizzle each cheesecake with caramel sauce and garnish with whipped cream, fresh mint, or a cherry if desired.
