Healthy Breakfast Cookies ππ₯π«
π 2 ripe bananas, mashed
π₯ 1 egg
π₯ 120g peanut or almond butter
π― 2 tbsp honey or maple syrup
πΏ 1 tsp vanilla extract
πΎ 150g rolled oats
π§ 1 tsp cinnamon
π§ ΒΌ tsp salt
π° 2 tbsp chia or flax seeds
π« 60g dark chocolate chips
π₯ 2 tbsp chopped nuts (optional)
Mix mashed bananas, egg, nut butter, honey, and vanilla until smooth. Stir in oats, cinnamon, salt, seeds, chocolate, and nuts. Scoop onto lined tray, flatten slightly. Bake at 175Β°C (350Β°F) for 10β12 mins until golden and set. Cool on tray.
