IT'S HERE!! Our mango hot sauce is finally available for sale!
Most people don't realize how much time, effort, and money goes into creating a shelf stable product that is saleable in New York State. A few years ago I started out by just making this mango hot sauce for friends and family, but with so much positive feedback I quickly decided I wanted to make the sauce to sell. Between everything else we do on the farm, and the growing schedule of the peppers (we use all our own hot peppers and a mix of at least 15 different varieties ranging from hot to super hot), I finally found time last spring to do some recipe testing. It took almost 10 test batches to get the flavor and texture of the sauce just right. Once I had that perfect recipe, I sent in a sample, the recipe, and steps for making the sauce to Cornell's Food Venture Lab and anxiously awaited the next 2 months to get my Scheduled Process which certified my recipe. I was then able to apply for my 20C license to be able to use SUNY Cobleskill's commercial kitchen space and finally ready to make my first batch of the hot sauce in the commercial kitchen. But of course I had to get inspected by NYS Ag and Markets while I made the sauce. After 3 days in the commercial kitchen the sauce was completed and now officially on the market!
From the beginning of my farming journey, I've had this goal to be able to make and sell products using our own veggies, hence the "Kitchen" in the name Sky Ridge Farm and Kitchen. And finally that dream has become a reality!
Until we are back in March for the 2026 growing season, we will not be selling the sauce directly. Here's where you can still find the mango hot sauce:
