I know it's been a long time since I have baked. We are still waiting on a new well.

We have onions and potatoes! Not just delicious , they are amazing and a great deal for locally grown!
FYI still no well drilling in sight, we are patiently waiting!

We stuffed a zucchini tonight!
We had onions, peppers, mushrooms and some leftover cooked potatoes. We added parmesan, herbs, garlic, salt and pepper. We cut them in half so they would cook quicker.

I know what your saying. Zucchinis really? Hear me out.
We grow these round zucchinis specifically for making stuffed zucchini. If that's not your thing they are perfectly fine for your usual zucchini recipes but if you hollow them out and quickly parboil them, stuff them, and roast them in the oven they are delicious.
What is your favorite recipe using zucchini?

We have 2 types of potatoes right now. There a few reds but mostly they are Yukon Gems. They are smallish taters that just need a good wash, no need to peel. They are soo delicious, so creamy.
Last night made them smashed and roasted. You boil them first then flatten them before roasting. The roasting gives them a crispy finish. Yum!
Bob used oil, salt and pepper.
