Hey my saucy friends!
Mr. Caleb Mendes Art has been super busy working on the latest design for our saucy Chemists. In case you’ve missed any of the recent ones, here’s a quick recap of the crew!

Please welcome…

First up…Meaner Green, our Serrano-based green…it’s hotter, meaner, and simpler than it’s little brother Mean Green (our tomatillo verde).

Next is…Smokin’! Sriracha, a funky, sweet, smoky, and warm Thai style sriracha you’re gonna love!

Then we have…Herdy Gurdy Borkberry, our insane pastry chef chemist! This sauce is a blend of blueberry, blackberry, and raspberry with a mild heat and finished with Chambord liqueur. It’s tangy, sweet, and your new favorite pancake syrup!

Then we have…our green sriracha…this name is still being developed, but the sauce is a hotter, bright, green chili-based sriracha with a slight sweetness and a mild funk.

Finally…our gingered peach habanero…this name is also being finalized, but this southern gentleman knows that a nice burn is just peachy! Made with a TON of peaches, almost as many habaneros, plenty of ginger, and some brown sugar for good measure…this hot gem from the south will be one of your favorites!

Hey my saucy friends!
The super-talented has captured another great chemist likeness for one of our recipes…this quirky fellow will be for our Herdy Gurdy Borkberry sauce, a triple-berry sweet sauce with a mild heat. Our first trial batch of this recipe should be ready later this month…stay tuned or message for more details and to secure a bottle for yourself!

Hey there my saucy friends!

The latest mad experiment has begun for our newest sauce…What the Hatch?

This one is for all the loyal hatch-heads out there!
Roughly one kilo each of raw with another kilo of roasted hatch chilies. A bit of raw garlic thrown in…because who doesn’t love garlic!

This bad boy will wild lacto-ferment for 4-8 weeks, before getting finished with some apple cider vinegar (and maybe some more hatch chili and garlic).

Hey there my Saucy friends!
The latest recipe is ready for y’all to try!

Please welcome Smokin’! Sriracha to the family!
This is a traditional fermented Thai Sriracha with a twist…
There’s loads of red jalapeños and garlic, of course…but we’ve added a touch of red bell pepper and plenty of ginger to give it a unique kick! We also swapped out the usual brown sugar for blackstrap molasses and honey for a smoky sweetness. Throw in a dash of smoked paprika and pasilla, and you’re all set!

Just for May the 4th…one more new recipe!

This one is going to be Mean Green’s bigger badder brother…

2 pounds green Serrano, 1 pound white onions, 1/2 pound raw garlic, and 3 pounds Granny Smith apples!

Just an update for all my pepper-loving customers out there…

Three new recipes in the test fermenters! These will be ready around mid July. Check out those beautiful colors!

First up is round one of our sriracha! This has loads of ripe red jalapeños, fresh ginger, and yummy garlic in the ferment. There’s also some red bell pepper for sweetness and dried pasilla for smoke and color. This one will get some molasses when bottled to add to the smoky finish. Expect this one to be a warm, flavorful, and smoky take on traditional sriracha.

Next up is ginger-peach habanero! This one will be sweet but on fire! Loads of orange habanero with even more peach, fresh ginger, and some mango to round out the flavor. This one should be sweet, fruity, and have a double-burn from the ginger and habanero.

Finally, triple-berry jalapeño…loads of ripe red jalapeños with a sweet & tart mix of blueberry, raspberry, and blackberry. Some dried guajillo peppers for good measure. This one should be warm, tart, and sweet when done.

We will have a limited supply of the 2nd batch of The Jerk, our Jamaican Jerk style pepper sauce!

We will have plenty of Mean Green, our mild tomatillo verde sauce, and Rio Rojo, our mild classic red sauce!

Stop by, have a taste, and enjoy some great beer, live music, and food!

FYI…Rio Rojo (my enchilada-style pepper sauce), The Jerk (my real Scotch Bonnet Jamaican-style pepper sauce), and Mean Green (my verde pepper sauce made with green jalapeños and tomatillo) are back in stock!

These XO versions have been aged for a minimum of 6 months will be available in March in Midland, TX! They are all lacto-fermented, then pasteurized before hand-bottling.

Stopped by  to grab one of  amazing pizzas!  Went with the hot honey pepperoni…it’s sooooo good!

We’re here at with the remaining limited Batch 00 editions of Holy Mole, Mean Green, Mocha Caliente, and Tropical Burn!
These are all pre-sale trial batches and are donations only.
We’ll be here from 6:30 till 9:40 tonight, or Batch 00 bottles run out.

Next trial batch of The Jerk is coming along nicely!
Adjusting the heat, using a different mango, and using a semi-mash in brine for the ferment which should give a faster ferment with the same flavor!
Should be ready in mid-June...stay tuned.
