There is more to this story. When in Rome my wife ordered steak well done and it came back extremely bloody. We sent it back and it came back the same, but a different steak. We gave up. Then I read that almost all European steak is grass fed and finished, In this country most are grain finished, meaning the beef gets fat with more marbling in the flesh. So when you fully cook European beef it gets very tough. They know American well done will ruin their steak! They are just trying to be helpful. - Bill ODonnell, Moderator, Culinary Survival
