Hello, Beeclipse fans! We realize we haven't posted much this season, and we feel badly about that, but there was a good reason! We were working on a very special project and partnership with the Loch & Key Whisk(e)y Society at Julio's Liquors in Westborough. They reached out to us last season about the possibility of working together to create bourbon barrel-aged honey...and we were stoked to try it!
This spring, we took 130 pounds of our spring honey up to Julio's, where it was put into a barrel seasoned with a very nice, premium bourbon (for legal reasons, we cannot post the name of the bourbon, but if you are interested you can certainly reach out to us to ask!). It aged in the barrel for almost three months before we pulled it out, and the results were outstanding! The honey was screened using a very fine cloth to remove all the material from the barrel, but it has acquired rich, complex flavors of oak, smoke, vanilla, and of course...bourbon.
We are so excited and proud to offer this very limited release, in addition to our regular honey, just in time for the holidays! Regular honey, 1 lb. jar (we have both spring and fall harvests): $15
Bourbon barrel-aged honey, 6 oz. jar: $20
Bourbon barrel-aged honey, 1 lb. jar: $45
(And for those bourbon fans out there, Julio's is currently using that same barrel to now age their selected bourbon! So in a few months, they will be bottling bourbon aged with our honey - keep an eye out with them if you're interested!)
