The recent meat recall has brought USDA inspection and processing into the conversation again.

One perspective from people who work on both sides of it and who own and run a USDA-inspected processing facility:

Knowing your farmer or rancher is valuable. Knowing there is a good processor behind that farmer matters, too. So do the logistics, cold storage and handling that happen along the way.

Inspection, regulation, sanitation, traceability, labeling, temperature control and recordkeeping are largely invisible to consumers, but they’re a critical part of how food moves from a farm to a family’s table.

You don’t need to be afraid of the food system to want to understand it better. But it is worth understanding the supply chain at different scales—and all the hands involved in bringing safe protein to the table.

Know where your food comes from.
And understand what happens to it along the way.
