We just turned 1 year old!!!
We can't thank all of our customers enough for giving us a shot in 2021. We made mistakes in our first year and tried our best to fix and learn from them. We hope that we were able to provide a needed and quality service to our area and we will strive to keep getting better this year. With that comes a few unfortunate increases as supplies for us have not been immune to the price hikes of the past few months. this updated price list will go into effect for all livestock slaughtered after January 1, 2022.
We can't wait to keep serving the community in this New Year!

After being in business for a couple of months and getting a feel for things, we've made a couple of necessary adjustments to our price sheet. Thank you to everyone for all the support so far!
We can't thank our friends Wade and Kelly enough for all the help they've given us, from the building of our shop, to sending tons of business our way, including this Angus steer we cut today. At Taylor Pride Farms they really know what they're doing when they are growing and finishing steers. Hopefully the new owners of this beef enjoy eating it as much as we liked looking at it while we cut it.
I bet after last week you probably think all we do is cut pork! I'm here to make sure you know that not only do we cut beef, but since I used to be a chef, I also know how to cook it pretty well too!
Here are some short ribs I took from one of our personal beef. I've noticed that in our area they have gone sadly unnoticed. They end up in ground beef, or confused with a BBQ style rib. So I decided to show you a recipe. A really good one. Short ribs make one of the best braises of any cut on a beef. It takes a while so plan for a nice Sunday supper! Let's get started.
Before any cooking, open up your short ribs and generously season them with your favorite seasonings. I like to keep it simple with kosher salt and cracked black pepper.
You start with a heavy sear, in canola or vegetable oil over HIGH heat. Get them nice and crispy, then remove them and let them rest. Next add some veggies, onions, carrots, and celery, and let them get some color over the same high heat. Once they get golden brown, give them a nice big drink of red wine (any dry red will do). Your pot should be hot enough for it to BOIL instantly. Give it a good stir/scrape with a wooden spoon to get all the flavor that stuck to the bottom loose.
Now throw your short ribs back in and cover them right up with beef broth. Remember you've never changed your heat. Keep that stove on high through all of this and work quickly! Let the broth come to a boil, cover the pot, and throw it in the over on 300° for about 3 and 1/2 hours. If you like potatoes, throw some right in about halfway through.
When it comes out, let it sit on the stove for about half an hour. Pull the potatoes and carrots to serve on the side and use some of the braising liquid to make the most flavorful gravy ever!

Not only did the first finished product leave the shop today but we also recieved our business cards in the mail. Its starting to feel like we're actually a business!
Wish I had taken more and better pictures, but sausage making has been in full swing in the shop. Over 400lbs! We make all of our sausage by hand from our own personal recipes, no pre-made mixes here. Hopefully many more of you get to try them soon!
All meat that comes through our shop, leaves neatly labeled and vacuum sealed to give you the most longevity and protection from freezer burn. Plus it looks great too!
