|| Do you purchase chicken WHOLE or in bits and pieces ? ||

We love getting a whole Organic chicken, it’s easy, you have a couple meals, soup, as well as broth, all from one bird!

If you’ve never roasted a whole chicken:
•Preheat your oven to 425.
•Toss an onion, carrots, brussels sprouts, potatoes, any other vegetable you would like into a cast-iron skillet with some olive oil, salt, and pepper. You can pour some beer or white wine over the vegetables while you sauté.
•Put your whole chicken (breast side up) into the sautéed vegetables a few minutes later, season with oil, salt, pepper, and your favorite garlicky chicken seasoning. •Stuff the chicken with rosemary, thyme, and lemon (check the cavity for gizzards first). Tuck the wings underneath the breasts so that they do not char.
•Roast the chicken for one hour. The chicken will be golden brown, the skin will be crispy, and a thermometer should read 165.
•Let the chicken cool before you cut into it.

Don’t forget to use the drippings over your chicken.
