The behind the scenes of cheese making is not so glamorous.

Most people see the finished cheese board.
What they don’t see is the amount of cleaning behind the curtain to make sure every batch meets the quality standards we believe in.

As Rufus says, “There is no romance in milking cows at 4:00am.”

And there’s not much romance in scrubbing vats, sanitizing tools, and deep cleaning equipment either. 😉
But this part matters.
Clean tools make happy cultures… and good cheese has never come from cutting corners. 🧀

If you are a Milton Creamery Cheese Curd fan you know what Wednesdays mean!
FRESH CURDS!! 🥳🥳

This week featured flavors are Smoked, Pizza and Dill.

Smoked curds are great on their own but a great addition to anything grilled!
Pizza curds are tasty on garlic/french bread and broiled for a few minutes and dipped in marinara sauce
Dill Curds for the pickle lovers, add to a sandwich and makes a perfect Bloody Mary garnish!

Our hours are Mon-Fri 9-5 and Sat 9-4. Remember we are closed this Thursday for Accession Day, so make sure to grab your curds fresh today. They will be available after 11:00am!

As we celebrate 20 years of Milton Creamery, we’ve been looking back at where it all started. (Thank you Ms Jane for taking pictures!)

A lot has changed over the years, but we still follow the same process we did 20 years ago. Just like hooping curds by hand, forking and milling each batch. Milton Creamery was built on old-fashioned cheesemaking and the belief that quality takes time, patience, and people who care about doing things the right way.

Twenty years later, we’re still making artisanal cheese with many of those same values that started this journey in the beginning.

We are still amazed that we are celebrating 20 years of making cheese! Thank you for being part of our story these past 20 years. 🧀

A little look behind the scenes of cheesemaking. 🧀

These hoops filled with fresh curds are one of the many steps between the vat and the cheese you find at your favorite cheese counter.

Each one of these hoops will eventually become a 40-pound block of cheese.

It may not look glamorous, but this is the heart of handcrafted cheesemaking — curds being carefully hooped, pressed, aged, and transformed into the cheeses Milton Creamery is known for.

Good cheese takes time.
It takes hands.
It takes patience.

And 20 years later, we’re still doing it much the same way we always have.
From local Amish and Mennonite Dairy farms in Southeast Iowa to tables across the country… it all starts right here.

Not every cheese earns a reputation beyond the deli case. Prairie Breeze has been fortunate to find fans from coast to coast…from everyday cheese lovers to industry judges.

Over the years, our little cheese from Southeast Iowa has brought home awards from the American Cheese Society, U.S. Cheese Championship, and World Championship Cheese Contest. We don’t take that lightly. For us, it’s a reflection of the care that starts on small family farms and continues through every batch we make.

Prairie Breeze is known for its sweet, nutty flavor, creamy-crumbly texture, and those little crunchies that cheese lovers look for. But what means the most to us is hearing how shops, cheesemongers, and deli teams use it to connect with customers every day.

WOW 😲 it is hard to find the words to describe how incredible it was to be a part of the event in DC.
