🍋 Lemon Cream Cheese Bread – A Slice of Sunshine! 🍋
📝 Ingredients
For the Bread:
1 ½ cups (190g) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup (120ml) unsalted butter, softened 🧈
¾ cup (150g) granulated sugar
2 large eggs 🥚
½ cup (120ml) sour cream or Greek yogurt
Zest of 1 lemon 🍋
2 tbsp fresh lemon juice
For the Cream Cheese Filling:
8 oz (225g) cream cheese, softened
¼ cup (50g) sugar
1 large egg yolk
1 tsp vanilla extract
For the Lemon Glaze:
¾ cup (90g) powdered sugar
1-2 tbsp fresh lemon juice

1️⃣ Preheat & Prep:
Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
2️⃣ Mix the Dry Ingredients:
In a bowl, whisk together the flour, baking powder, baking soda, and salt.
3️⃣ Make the Batter:
Beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the sour cream, lemon zest, and lemon juice. Slowly fold in the dry ingredients until just combined.
4️⃣ Cream Cheese Filling:
In another bowl, beat the cream cheese, sugar, egg yolk, and vanilla until smooth.
5️⃣ Assemble the Bread:
Pour half the batter into the loaf pan. Spoon the cream cheese mixture on top, then spread the remaining batter over it.
6️⃣ Bake:
Bake for 50-60 minutes, or until a toothpick inserted into the bread comes out clean. Let it cool in the pan for 10 minutes before transferring to a wire rack.
7️⃣ Add the Glaze:
Whisk together powdered sugar and lemon juice. Drizzle over the cooled bread for a sweet-tart finish.
