Don’t judge a loaf by its color!🍞‼️

Ever notice that some sourdough loaves—like Lemon Blueberry Sourdough—come out with a darker, golden-brown crust?

That rich color isn’t because it’s burnt! 🍋🫐

The natural sugars in the blueberries caramelize during baking, creating a deeper color and extra flavor. Sourdough’s long fermentation also helps develop a beautifully browned crust through a process called the Maillard reaction—the same thing that gives toasted marshmallows, cookies, and fresh-baked bread their delicious flavor.

So while the crust may look darker than a traditional loaf, what you’re tasting is sweet caramelization and complex sourdough flavor—not burnt bread! I actually prefer the taste of bread with a darker crust. What about you??

Rustic sourdough is never meant to be perfectly uniform — the blistered crust, bold ears, deep coloring, and natural variation are all part of what makes true artisan bread so special. Every loaf develops its own personality during fermentation and baking.

These loaves were baked in my new stone deck oven, which gives them that beautiful crackly crust and bakery-style spring. I’m still learning and adjusting to a completely different baking process, but seeing these rustic loaves come out with so much character has me so excited!

I will be at the Minden Farmers Market this Saturday 8-12pm with classic sourdough and whipped butters 🍞🍞 come out and grab a loaf!
