do you grow cucumbers? what's your favorite thing to make with them?
we love cucumber salads, pickles, and feeding them to our animals as a welcom refreshing treat.
cucumber lemonade mocktail (4 servings)
4 medium cucumbers (bitter-free slicers are best)
1 cup simple syrup*
2 cups cold water
1/2c fresh squeezed lemon juice (I used bottled because it's what I had on hand)
ice as desired
1. peel & juice the cucumbers. If no juicer, you can use a food processor or blender and strain out the large chunks.
2. mix the cucumber juice, simple syrup, water, and lemon juice, in a blender.
3. serve over ice or refrigerate
ours made 5 8-oz cups but it all depends on the size of your cucumbers.
*simple syrup I used was 1 c water + 3/4c sugar
it tastes so refreshing after time working in the hot & humid garden!
