π Sourdough Pizza Ingredients for the dough: * 175 ml water, room temperature * 50 g active sourdough starter * 250 g strong white flour, at least 13% protein * 10 g salt * 10 ml additional water, to add with the salt Dough Preparation 1. Pour 175 ml of room-temperature water into a bowl. Add 50 g of active sourdough starter and 250 g of strong white flour. Mix until all the ingredients are combined. 2. Cover the bowl and let the dough rest for 30 minutes in a warm place, ideally around 25β28Β°C (77β82Β°F). 3. After 30 minutes, add 10 g of salt and 10 ml of water. Mix well until the salt is completely incorporated into the dough. Cover and let it rest for another 30 minutes. 4. Perform 3 sets of stretch and folds, with approximately 30 minutes between each set. 5. After the final fold, cover the dough and leave it undisturbed in a warm place for approximately 2β3 hours. 6. Transfer the dough to a lightly floured surface. Fold the edges toward the center, then let it rest on the counter for about 20 minutes. 7. Shape the dough and place it in a container. Cover and refrigerate for 10β20 hours. 8. Before making the pizza, take the dough out of the refrigerator in advance and allow it to come closer to room temperature. Pizza Sauce Mix together: * Sour cream * Ketchup * Garlic powder * Paprika Adjust the quantities according to your taste. Toppings For my pizza, I use: * Bell pepper * Mushrooms * Red onion * Ham * Mozzarella * A mix of different cheeses, such as cheddar You can, of course, use any toppings and cheeses you like. Baking Preheat the oven to 230Β°C (450Β°F). Place the baking tray inside while the oven is heating so that the tray gets very hot. Shape the pizza, spread the sauce over the dough and add your toppings and cheese. Carefully transfer the pizza onto the preheated baking tray and bake at 230Β°C (450Β°F) for approximately 15 minutes, or until the crust is golden and the cheese is beautifully melted.
