Sourdough English Muffins ๐Ÿงก

A first for us here at Misty Meadowsโ€”and the perfect way to wrap up a full weekend of Easter baking. Thereโ€™s something so satisfying about trying something new, especially when it involves a slow sourdough process.

These have been cold fermenting an extra day for that rich, tangy flavorโ€ฆ and weโ€™re pretty excited to enjoy them fresh in the morning.

Simple ingredients, a little patience, and a whole lot of goodness. โœจ

After accidentally sending a few sourdough starters to their floury graves, I brought โ€œSofiaโ€ home in January last year. Iโ€™ll be honestโ€ฆ I havenโ€™t always been the most faithful caretaker. Sheโ€™s spent long stretches tucked away in the fridge, unfed and forgotten.

But every time I pull her out, give her a little flour and water, she wakes right up โ€” not just doubling, but tripling like sheโ€™s excited to be part of the story again.

Sheโ€™s become a quiet reminder to me that even when we neglect things, grace still meets us. New life is still possible.

Todayโ€™s labor of love (and a whole lot of grit): sourdough bagels ๐Ÿฅฏ

A bakerโ€™s dozen of onion everything bagels and a bakerโ€™s dozen of cinnamonโ€“orange zest raisin bagelsโ€”all sourdough, all made today.

My stand mixer isnโ€™t built for bagel dough, so this was fully hand-mixed with several rounds of stretch-and-folds. Which means my already-aching hands, elbows, neck, and shoulders wereโ€ฆ unimpressed. ๐Ÿ˜…

I canโ€™t take anti-inflammatories right nowโ€”not before surgery and not for months after, since they can interfere with bleeding and bone regrowth. Add autoimmune fun to the mix, and Iโ€™m realizing just how much those meds were quietly carrying me. Funny how you donโ€™t always know how good you have it until you donโ€™t.

Stillโ€”this felt really good to do for my family before surgery.

Hard? Yes.

Worth it? Absolutely. ๐Ÿค

The base recipes came from , and along with , their tips and tutorials completely changed sourdough for me. What once felt cumbersome and wasteful now feels simple and doable. I keep just 20โ€“50g of starter in the fridge, pull it out, feed what I need, and goโ€”no daily discard drama.

The starter itself was purchased about a year ago (supposedly 120 years old). At this point, itโ€™s probably lost any trace of its original rootsโ€ฆ so weโ€™ll call it a one-year-old Mineral starter now. ๐Ÿ˜„

๐ŸŒฑ Want to Know If Your Seeds Will Grow? Try a Quick Seed Viability Test! ๐ŸŒฑ

Before you spend time planting older seeds this spring, find out if theyโ€™re still good! Washington State University Extension has a simple step-by-step guide you can follow at home.

What youโ€™ll need:
๐Ÿงช ~10 seeds from the packet you want to test
๐Ÿงป A paper towel
๐Ÿ’ง Water
๐Ÿ›๏ธ A sealable plastic bag (quart or gallon size) ๏ฟผ

How it works:
1๏ธโƒฃ Wet the paper towel and wring out the excess water.
2๏ธโƒฃ Lay the 10 seeds along the damp towel.
3๏ธโƒฃ Roll up the paper towel and place it inside the plastic bag.
4๏ธโƒฃ Seal the bag and leave it in a warm spot, ie. kitchen counter or top of fridge.
5๏ธโƒฃ Check every few days to make sure the towel stays moist.
6๏ธโƒฃ After 5โ€“10 days, unroll and count how many seeds have sprouted. ๏ฟผ

๐ŸŒผ What the results mean:
โ€ข 10/10 germinated โ€” seeds are fresh and vigorous!
โ€ข 8 seeds sprouted = 80% viability โ€“ 9 sprouted = 90 % viability. Consider sowing extra seeds per hole and thinning later.
โ€ข 6 or fewer sprouted โ€” consider using fresh seeds or save these for microgreens, which are densely planted.
โ€ข 0 germinated โ€” these seeds are likely no longer viable. ๏ฟผ

Most seeds stored properly are still viable for at least 1 year past the packet date, but viability drops over time โ€” this quick test tells you what you really have! ๏ฟผ
