Sourdough English Muffins 🧡

A first for us here at Misty Meadows—and the perfect way to wrap up a full weekend of Easter baking. There’s something so satisfying about trying something new, especially when it involves a slow sourdough process.

These have been cold fermenting an extra day for that rich, tangy flavor… and we’re pretty excited to enjoy them fresh in the morning.

Simple ingredients, a little patience, and a whole lot of goodness. ✨

After accidentally sending a few sourdough starters to their floury graves, I brought “Sofia” home in January last year. I’ll be honest… I haven’t always been the most faithful caretaker. She’s spent long stretches tucked away in the fridge, unfed and forgotten.

But every time I pull her out, give her a little flour and water, she wakes right up — not just doubling, but tripling like she’s excited to be part of the story again.

She’s become a quiet reminder to me that even when we neglect things, grace still meets us. New life is still possible.

We’re swimming in fresh farm eggs this week at Misty Meadows Homestead & Apiary — and I can only make so many quiches before Steve starts hiding.

Today’s labor of love (and a whole lot of grit): sourdough bagels 🥯

A baker’s dozen of onion everything bagels and a baker’s dozen of cinnamon–orange zest raisin bagels—all sourdough, all made today.

My stand mixer isn’t built for bagel dough, so this was fully hand-mixed with several rounds of stretch-and-folds. Which means my already-aching hands, elbows, neck, and shoulders were… unimpressed. 😅

I can’t take anti-inflammatories right now—not before surgery and not for months after, since they can interfere with bleeding and bone regrowth. Add autoimmune fun to the mix, and I’m realizing just how much those meds were quietly carrying me. Funny how you don’t always know how good you have it until you don’t.

Still—this felt really good to do for my family before surgery.

Hard? Yes.

Worth it? Absolutely. 🤍

The base recipes came from , and along with , their tips and tutorials completely changed sourdough for me. What once felt cumbersome and wasteful now feels simple and doable. I keep just 20–50g of starter in the fridge, pull it out, feed what I need, and go—no daily discard drama.

The starter itself was purchased about a year ago (supposedly 120 years old). At this point, it’s probably lost any trace of its original roots… so we’ll call it a one-year-old Mineral starter now. 😄

🌱 Want to Know If Your Seeds Will Grow? Try a Quick Seed Viability Test! 🌱

Before you spend time planting older seeds this spring, find out if they’re still good! Washington State University Extension has a simple step-by-step guide you can follow at home.

What you’ll need:
🧪 ~10 seeds from the packet you want to test
🧻 A paper towel
💧 Water
🛍️ A sealable plastic bag (quart or gallon size) 

How it works:
1️⃣ Wet the paper towel and wring out the excess water.
2️⃣ Lay the 10 seeds along the damp towel.
3️⃣ Roll up the paper towel and place it inside the plastic bag.
4️⃣ Seal the bag and leave it in a warm spot, ie. kitchen counter or top of fridge.
5️⃣ Check every few days to make sure the towel stays moist.
6️⃣ After 5–10 days, unroll and count how many seeds have sprouted. 

🌼 What the results mean:
• 10/10 germinated — seeds are fresh and vigorous!
• 8 seeds sprouted = 80% viability – 9 sprouted = 90 % viability. Consider sowing extra seeds per hole and thinning later.
• 6 or fewer sprouted — consider using fresh seeds or save these for microgreens, which are densely planted.
• 0 germinated — these seeds are likely no longer viable. 

Most seeds stored properly are still viable for at least 1 year past the packet date, but viability drops over time — this quick test tells you what you really have!
