🍓 STRAWBERRY SORBET (0% milkfat)
760 g strawberry puree
200 g sugar
40 g lemon juice
1 pinch kosher salt
🍓🥛 STRAWBERRY SHERBET (1.2% milkfat)
450 g strawberry puree
350 g whole milk
180 g sugar
20 g lemon juice
1 pinch kosher salt
🍓🍨 STRAWBERRY GELATO (7% milkfat)
280 g strawberry puree
420 g whole milk
140 g heavy cream
160 g sugar
1 pinch kosher salt
Yes, gelato translates to ice cream, but it usually has less milkfat, less air whipped into it, and is served at a warmer temp. That’s why it often tastes more flavorful.

407 g strawberry puree
113 g whole milk
340 g heavy cream
140 g sugar

The video makes it seem like I used the same base for all 4, but as the dairy content changes, the amounts of the other ingredients change too. Ice cream making is an art and a science!
Since these recipes are simplified to emphasize the milkfat ladder, they contain no stabilizers, so they may seem more icy compared to store bought if you choose to freeze them.
