Simple strawberry sorbet 🍓 Recipe 👇

760 g strawberry puree
200 g sugar
40 g lemon juice
1 pinch kosher salt (optional)

We used an ice cream machine to make this, but you can also simply blend, freeze, and scoop.

Makes 1 qt (4-6 servings).

Each recipe takes ~20 min on this machine. Just dump everything in!

🍓 STRAWBERRY SORBET (0% milkfat)

760 g strawberry puree
200 g sugar
40 g lemon juice
1 pinch kosher salt

🍓🥛 STRAWBERRY SHERBET (1.2% milkfat)

450 g strawberry puree
350 g whole milk
180 g sugar
20 g lemon juice
1 pinch kosher salt

🍓🍨 STRAWBERRY GELATO (7% milkfat)

280 g strawberry puree
420 g whole milk
140 g heavy cream
160 g sugar
1 pinch kosher salt

Yes, gelato translates to ice cream, but it usually has less milkfat, less air whipped into it, and is served at a warmer temp. That’s why it often tastes more flavorful.

🍓🍦 STRAWBERRY ICE CREAM (14% milkfat)

407 g strawberry puree
113 g whole milk
340 g heavy cream
140 g sugar
1 pinch kosher salt

The video makes it seem like I used the same base for all 4, but as the dairy content changes, the amounts of the other ingredients change too. Ice cream making is an art and a science!

Since these recipes are simplified to emphasize the milkfat ladder, they contain no stabilizers, so they may seem more icy compared to store bought if you choose to freeze them.

Star Wars tasting menu? A no-brainer on a day like today!

Right now ’s whole tasting menu is inspired by George Lucas’ films. All dishes you see in the reel are based on Star Wars, except the brain—it was the chilled monkey brain they ate in Indiana Jones and the Temple of Doom.

I used to work with at . She’s endlessly creative. This menu is another gem. Catch it before it disappears to a galaxy far, far away! (Ends in June.)
