No BBQ competition in sight this week means time to cook something delicious. First up, leg of lamb for gyros. All that time I usually spend trimming chicken and making sauces, I used to put together a naan... totally worth it!

Being a pitmaster means adjusting to your proteins to achieve optimal results. This week we couldn't source the heavier Springer Mountain Farms thighs we like, so we ran some smaller ones. We still managed a 172, not good enough for a call, but it didn't crush our day.
