Off the Deck started in 2016 with a jar and a question. Jeremiah and Rachel were running a lacto-fermentation experiment at home — peppers, salt, water, patience — and what came out of it eventually became Habanero . Ten years later the questions are the same, we've just gotten more stubborn about the answers: ferment whole peppers, wait the full time, and don't ship anything we wouldn't put on our own eggs. We answer to ourselves. That's still the whole business plan.

Three bottles gets you there, and you can mix the lacto line and however you like — the threshold is the total, not the labels. Under $40 it's a flat $8, tracked. No code, no end date, nothing to catch.

Before there was koji, there was the brine. Our lacto-fermented line starts with whole Red River Valley peppers in a simple salt brine — not a mash — held for a minimum of 21 days, cold-processed, with a little apple cider vinegar added after the ferment for consistency. It's the same family of fermentation behind kimchi and traditional pickles, pointed at hot sauce. It's also where our two Scovie Awards live: Habanero and Habanero . Peppers, salt, water, time. Koji is the same fermentation craft behind miso and sake — we build it onto a single pepper and let it work for eight months minimum, with reserve batches running two to four years. What that long ferment develops is umami: a deep, savory roundness you taste before the heat arrives. It isn't about live cultures — it's enzymes slowly breaking a pepper down into glutamate and dozens of new aromatic compounds. We're one of the only hot sauce makers working this way, and the real difference isn't the koji, it's how long we're willing to wait. Three single-pepper bottles — Fresno, Habanero, Jalapeño — $18 each. You can't cheat time. We never tried.

Here's a small choice that changes everything about a sauce: whole peppers, not mash.

Most fermented hot sauce begins as a mash — peppers ground up before they ferment. We brine our peppers whole, in salt, and let them go at least 21 days. Whole peppers hold their structure, release their sugars and heat more slowly, and ferment more evenly. The result reads cleaner on the tongue: bright and tangy, with the heat arriving in order instead of all at once. After the ferment we add a little apple cider vinegar, purely for batch-to-batch consistency.

It's slower. It's more work. It's also the difference we can taste, so it's the way we do it.

Groceries went up and stayed up. Nobody needs us to tell them that, and a bottle of hot sauce doesn't fix a grocery bill...

Groceries went up and stayed up. Nobody needs us to tell them that, and a bottle of hot sauce doesn't fix a grocery bill.

What it does fix is the plate. One 5 oz bottle is about 30 teaspoons, a teaspoon is a full serving, and that puts a $14 bottle at roughly 47 cents a meal. It keeps a year in the fridge once it's open.

So the new post is five simple dinners and the sauce that carries each one: instant ramen with Fresno , a baked potato with Jalapeño , rice and beans with Habanero , grilled cheese with Blend , and popcorn with Jalapeño . There's also a section on mixing it into the condiments already in your fridge door, which is the fastest way to get more out of one bottle.
