Steak and cauliflower avocado rice

Steak:
1.Marinated the steak in Allegro Tennessee Whiskey and Tony Chachere creole seasoning.

Cauliflower avocado rice:
1 bag frozen cauliflower rice
1 avocado diced
Juice of one lime
2 tbs cilantro
1 half a jalapeño diced
1tsp garlic

Directions:
1. Cook steak however you like, I did mine in the Air Fryer.
2.Pan fry rice till golden brown with garlic.
3.Add avocado, lime juice, cilantro, jalapeño once cooled off and mix till avocado breaks down a little.
4. Eat and enjoy.

Homemade kimchi ramen 🍜

Ingredients
-3 cups water
-½ cup well fermented kimchi
-¼ cup bean sprouts
-1 tablespoon white rice wine
-1 teaspoon extra light olive oil
-1 teaspoon sesame oil
-1 teaspoon rice vinegar
-1 teaspoon smoked paprika
-1 teaspoon low sodium soy sauce
-½ teaspoon Korean red chili flakes
-¼ teaspoon Himalayan/sea salt
-A few sprinkles Szechuan peppercorns
-2 packets ramen

Garnish
-1 scallion
-1-2 tablespoons well fermented kimchi

Instructions:

1.Add the 3 cups of water, kimchi, bean sprouts, white rice wine, olive oil, sesame oil, rice vinegar, paprika, soy sauce, Korean red chili flakes, salt, Szechuan peppercorns and ramen in a small/medium saucepan.

2.Bring it to a boil, and continue to cook on boiling heat for a total of 8-10 minutes until the ramen is soft to eat.

3.Meanwhile, slice the scallions into super thin strips and put it in ice water for a few seconds to let it curl up a bit.

4.Once the ramen is ready, spoon it onto one or two bowls, then garnish with the scallion and a tablespoon or two of fresh kimchi.

Homemade beef stroganoff

Ingredients:

1-1/2 pounds of thinly sliced steak (skirt, flank or ribeye to name a few)

4 tablespoons all-purpose flour, divided

1/2 teaspoon kosher salt

1 tablespoon olive oil

1 cup sliced cremini mushrooms

1/4 cup finely diced yellow onion

1 teaspoon chopped fresh garlic {about 2 small cloves}

2 tablespoons butter

1-1/4 cup beef broth

1/4 cup dry white wine (Pinot Grigio)

1 tablespoon worcestershire sauce

3/4 cup sour cream

Salt and black pepper, to taste

12 ounces egg noodles, cooked as directed on package

Directions:

Slice up the steak into thin strips. Toss it in a bowl with 1/2 a teaspoon of kosher salt and 1 heaping tablespoon of all purpose flour. Set it off to the side so it comes up to room temperature {about 25 minutes}.

Heat a 10-inch skillet over medium-high heat with 2 tablespoons of olive oil. Once hot add in the steak strips and let them cook undisturbed for 5 minutes so a brown crust forms.

After the time is up stir the steak strips and add in the sliced mushrooms, diced onions and chopped garlic. Stir and cook until the mushrooms and onions are soft. About 4 minutes.

Remove the beef and onion mixture to a clean bowl and set it off to the side.

Reduce the heat under the pan to medium and give it a chance to cool down before adding two tablespoons of butter. Once melted add in the 3 tablespoons of all purpose flour. Whisk and cook the roux for 2 minutes.

Pour in the beef broth and wine. Whisk and let it cook until thickened. Add a tablespoon of Worcestershire sauce, the beef and mushroom mixture, season with salt and pepper and stir in 1/2 to 3/4 cup of sour cream.

Heat through and serve over cooked egg noodles

This dish was absolutely delicious!!!! One of my favs by far!

Gumbo

Ingredients

For the Roux:
1 heaping cup flour
2/3 cup oil

For the Gumbo:

1 large yellow onion , diced
1 bunch green onion , finely chopped
1 bunch parsley , finely chopped
2-3 cloves garlic
1-2 Tbsp Cajun Seasoning*
6-8 cups chicken stock
1 Andouille Sausage
2 chicken breast cooked and chopped*
1 bag frozen okra
Cooked white rice for serving

Instructions
For the Roux*:
1. In a large, heavy bottom stock pot combine flour and oil. Cook on medium-low heat, stirring constantly for 30-45 minutes. This part takes patience--when it's finished it should be as dark as chocolate and have a soft, "cookie dough" like consistency. Be careful not to let it burn! Feel free to add a little more flour or oil as needed to reach this consistency.

2.In a separate skillet on medium-high heat place the sausage slices in one layer in the pan. Brown them well on one side (2-3 minutes) and then use a fork to flip each over onto the other side to brown. Remove to a plate.

3.Add 1/2 cup of the chicken broth to the hot skillet that had the sausage to deglaze the pan. Pour the broth and drippings into your large soup pot.

4.Add remaining 5 1/2 cups of chicken broth. Add veggies, parsley, and roux to the pot and stir well.

5.Bring to a boil over medium heat and boil for 5-7 minutes, or until the vegetables are slightly tender. (Skim off any foam that may rise to the top of the pot.) Stir in cajun seasoning, to taste. Add chicken and sausage.

6.At this point taste it and add more seasonings to your liking--salt, pepper, chicken bullion paste, garlic, more Joe's stuff or more chicken broth--until you reach the perfect flavor. Serve warm over rice. (Tastes even better the next day!)

Homemade tomato soup

Ingredients
3 - 14.5 ounce cans of diced fire-roasted tomatoes
2 cups of chicken broth
6 cloves of garlic roughly chopped
1 yellow onion chopped
3/4 teaspoons salt
1/2 teaspoon black pepper
1 tsp sugar
1 cup heavy cream
1/4 cup chopped basil

Directions:

1.Add tomatoes, chicken broth, onions, garlic, salt, pepper, and sugar to the slow cooker and cook on high for 4 hours.

2.After the 4 hours, add in the chopped basil leaves.

3.Using either an immersion blender or a stand blender, blend soup until smooth.
(If you used a regular stand blender return the soup to the slow cooker)

4.After blended, add in the cream.
Stir to combine.

5.Cook for 30 more min
