Thanks to all who joined us for our Trip down to Texas for another SOLD OUT CLASS at Gourmet Chef!
My best effort to duplicate Ernest Servantes’ Brisket Huevos Rancheros from Burnt Bean BBQ for our Brunch in Seguin Course.

Then a tribute to Gruene River Grill and my take on their Crawfish Poblano Corn Chowder and Clear Springs for some Catfish and my take on their “Stinger”, a Jalapeno stuffed with Catfish and Shrimp and instead of breading and frying, I did it bacon wrapped with Texas Bourbon Peach BBQ Glaze!

And a Shiner Bock marinated Flank Steak with Mezcal Chimmichurri and Shiner Bock Gorgonzola Sauce!
And back to Burnt Bean for my take on their Big Red Trea Leches Cake!

Huge thanks to Karen Weber, Lauren, and Mickaya (sp?)!!!! They are bad asses and do such a great job with prep and in class ex*****on!
