This fall has been a steady return to butchery - breaking down animals together, learning from one another, and reconnecting with the craft that’s become such a big part of who I am and ultimately grew into what Bonjerk is today.

Last month, I spent a few quiet, grounding days with friends at , a women-led, regenerative ranch tucked into Colorado’s San Luis Valley. The quiet mornings, the wide-open sky, and teaching a beef breakdown to a group of women from all different corners of work and life reminded me what makes this craft so special. It was also a needed reminder that staying close to butchery keeps me connected to the animals, the people raising them, and the standards that guide every decision we make at Bonjerk.

This month’s newsletter shares a few reflections on this season of connection, celebration, and what we’re looking forward to as the holidays roll in.

In 2019, I was in New York for a one-month intensive hog butchery course at with as our incredible instructor. One of the other participants was working at Blue Hill Farm, and through that connection, I had the chance to visit the farm. It was my first time setting foot on a working farm, and one of the most formative moments in my journey into the meat world.

I got a full tour of their operation. Blue Hill is known not just for its restaurant, but for its commitment to regenerative farming, whole animal utilization, and thoughtful stewardship of both land and animals. It was the first time I saw pigs raised with that level of care and intention. That visit, alongside learning butchery, completely shifted the way I thought about meat.

That experience quietly planted the seed for what would become a core part of our business: sourcing from farms that raise animals with respect, allow pigs to root and roam, and prioritize practices that support soil health and animal well-being.

We don’t look for certifications as our baseline. we look for relationships. We partner with farmers who share our values, and we take the time to understand how they raise their animals. It’s slower, sometimes more complicated, but it’s the way we believe meat should be sourced.

I’m blown away by all the love for our Char Siu Pork Jerky. Seriously, it means so much!! It was the very first flavor I knew I wanted to launch with for Bonjerk, so seeing it become a favorite is wild in the best way.

But if you know me, I’m always rooting for the underdog, so here’s a little shout out to our Black Garlic 💁🏻‍♀️🧄 It’s so delicious—deep, savory, and rich. Like slurping a spoonful of really good broth. It’s highly addicting in my house 🍜
