Our first attempt at fried chicken was just kind of "meh" so we decided to try again; this time with boneless skinless chicken breasts. We started with a simple overnight brine, then seasoned the meat with salt pepper and brown sugar. Next, we used a seasoned flour coating that included corn starch. Instead of straight egg wash, we used egg, milk spices, and mayonnaise then ran the chicken back thru the flour. Results were absolute perfection!! 🏆

Happy Father's Day to All! We've got ribs on the smoker for supper but wanted to share one of our favorite summer meals: Strawberry & Feta Spinach Salad. This salad makes a quick but healthy week night supper and is easy to prep for lunches. We love G. Hughes Balsamic dressing but you can use your favorite vinaigrette. Give it a go and let us know what you think! 😊
