Fiscalini Farmstead Cheese Fiscalini Farms was established in 1914 in Modesto, California. Today, on the same piece of land we Fiscalini Cheese is a family owned and operated business.

We enjoy meeting our consumers and customers and are excited to share a glimpse of our lives with you. Upgrade your summer steak dinner with this cheesy silky potato mash. ⁠

SMOKED CHEDDAR POTATO MASH⁠
⁠
�4 lb (2kg) large potatoes�¾-1 cup milk warmed (alternatively use heavy cream)�4 tbsp butter cubed�2 cups shredded cheddar cheese �salt and black pepper to taste⁠
⁠
Peel and quarter potatoes ⁠
⁠
Place the potatoes in a large pot then fill with water just covering potatoes and add a generous pinch of salt. �⁠
Place over medium-high heat and bring to a boil. �⁠
Allow the potatoes to cook for 30-45 minutes or until fork tender. �⁠
Strain the potatoes ⁠
⁠
Using a ricer, rice potatoes back into pot then add the warmed milk and melted butter stir to combine.�⁠
Add the cheese and stir again �⁠
Season with salt and pepper to taste then serve.

Grilled Eggplant Panini - Lionza⁠

1 eggplant sliced in 1/4 inch rounds⁠
1 red pepper roasted or jarred ⁠
1/2 cup arugula⁠
Pesto⁠
Olive oil⁠
Lionza⁠
Ciabatta bread⁠
⁠
Toss eggplant rounds in olive oil salt and pepper and Grill⁠
Assemble sandwich: ⁠
Spread both slices of bread with pesto, top with grated Lionza, eggplant, and roasted peppers and add arugula to the middle. Close sandwich and place on grill or panini press. ⁠
