Just like most airline passengers this week here at the farm we are delayed….we are currently in process of assessing what product will be available for the markets and online store. As of this writing everything is very frozen, though we will have warm temps starting later today. Here at the farm we had about 2” of snow, better than our neighbors to the south many of who had 12”!!!
As a reminder freezing can also enhance the flavor of some vegetables, such as root vegetables like carrots and leafy greens like spinach and kale, which often become sweeter after a frost, Stay tuned to see what our weekly harvest is going to yield! While the sun is warming those plant the elves are busy starting the Christmas tree preparations. Today the team is putting up the greenhouse, the “showroom” is where we display free standing trees for customers to browse out of the elements of December weather.

Truly fall greetings from the farm! What spectacular weather we are enjoying wrapping up the may farm tasks and preparing for the net seasonal change. Many of the planting beds are cleared ( plants, stakes, mulch removed) …the remnants of seasons work now cleared. That “wrap” feeing is rather soothing knowing again we have completed a growing season and look forward to the next farm adventures and 2026 opportunities and challenges!
This week we harvested the last broccoli and cauliflower. Try a simple cauliflower roast to complete a weekly meal….cut apart, dose with olive oil, salt & roast until tender… cauliflower is a nutrient-rich vegetable that provides essential vitamins, minerals, fiber, and other beneficial compounds. It supports various aspects of health, including immune function, bone health, digestion, and weight management making it a great choice.
We are harvesting arugula, greens mix and mustard greens form the permanent raised beds. This investment has proven a great asset. As well as the last of delicious carrots!
This week we started planting our seed Garlic. Each “head" is broken into cloves, then planted in the field on raised bed with plastic mulch. We grow 5 varieties all with deep intense flavor. We are offering “bulk seed” garlic for sale this week, in ½ pound and 1 pound bags. We have 3 varieties available for seed garlic purchase
*Ivan Garlic is a hardneck garlic variety, likely a Porcelain type, known for its robust flavor and large, easy-to-peel cloves.
*German Extra Hardy garlic has a robust, classic garlic flavor that is pungent and spicy when raw, but mellows into a delicious, sweet, and nutty taste when cooked.
*Chesnock Red Garlic A hardneck variety, is very flavorful, having won taste tests for best-baking garlic. The large, easy-to-peel cloves keep their shape and full-bodied flavor when cooked, making them a valuable addition to many types of cuisine
As a reminder we have 3 markets left in November and that will complete our farm market season as the Christmas trees will be arriving sales will begin the day after Thanksgiving.

We wrapped the outdoor season with sunshine, smiles, and gratitude!!! We're looking forward to recharging, planning, and getting inspired for spring and summer 2026 markets.

In the meantime we begin the Indoor Market Season at 61st Street (https://www.experimentalstation.org/market) . You can find us outside adjacent to the main entrance on Blackstone and we'll be there every Saturday in November through November 22. Last Friday morning we were greeted by 25 degrees temps, a season ending frost. Luckily we harvested peppers, squash, and other products in time to store for the remaining markets! Many items sweeten with cold temps, and the greens, root veggies, broccoli, and cabbage are extra tasty. In a few weeks we'll also reintroduce our frozen specialty items: roma & cherry tomatoes, sweet corn and diced pepper variety packs.

This week we'll have:

It's a wrap for the 2025 season and this will be our last week at Logan Square and 61 St. summer outdoor markets. It's been our pleasure to bring you the bounty from our farm this year! Each week since May we've enjoyed greeting you, hearing about your lives, and sharing our best ideas on how to cook the classics and newest produce additions.

We have tried our best to meet the challenges of the season, from cold and wet to hot and dry. But through it all our teams continued and our customers supported. A big thank you for coming out, stopping to support our work, and your reliable weekly visits (rain or shine)!

With only a couple of markets left in the summer season it's a great time to start stocking up on your winter stores! We'll have plenty of popcorn, canned goods, onions, potatoes, garlic, and of course winter squash.

Here on the farm we "cure" our winter squash after harvesting by laying them in wagons to get good heat and circulation. This makes the rinds tough enough for long-term storage. Many winter squash varieties can then last up to 3 months (https://veritablevegetable.com/winter-squash-variety-guide/) if properly stored. After curing, store squash in a cool, dry place (around 55°F) with good ventilation, ideally in a single line.

We grow several winter squash hybrids, which are the offspring of a cross between two or more distinct parent lines, usually of same species, and selected for improved traits:

We had over 1” of rain this week which has done wonders for settling the dust and reinvigorating all! Tonight it’s predicted to be in the 30s and we are ready to embrace cooler fall days and flannels. As the seasons change our produce options will too. (This will be the last week for sweet corn so stock up (https://extension.psu.edu/preserving-sweet-corn-successfully) !) But as we say goodbye to some summer items we will have some new options this week like spinach, lettuce mix, and carrots. It's time to fully embrace the fall recipe season! The high tunnel tomatoes have been removed as we begin to prepare for planting for winter greens and the tomatoes have overall been slowing down. We'll harvest tomatoes today, so check the online store for canning availability Thursday for an update.

The potato harvest was completed this week and we also have some new items from our raised beds ready for harvest. The melons are done but the winter squash is still plentiful. This week was HOT but cooler temps are right around the corner and next week there will be some days for cozy recipes like butternut squash chili. The fall harvest continues, and this week we gathered 10 pallets of winter squash! We grow Long Island Cheese pumpkins and a variety of winter squashes: honeynut, butternut, acorn, spaghetti, kabocha, delicata, autumn frost. We've been enjoying lots of "gourdgeous" meals this week, from savory like one of the recipes below to sweet. (https://www.allrecipes.com/recipe/16796/acorn-squash/)

One tip we've learned to make cutting and peeling winter squash easier is to first poke several holes in the whole squash with a fork then microwave it on high for 2–5 minutes. After it cools slightly, you'll find the skin is much softer and easier to process.

Last Friday evening Gorman Farm Fresh Produce hosted a farm dinner for the Will County Farm Bureau for local health care providers and educators to share our farm story, tour the fields, enjoy our produce, and learn from other farmers all about farming. It was a great time and we appreciate any opportunity to share our story --and delicious food-- with the community!

We are just on the cusp of fall harvest and have been checking our fields for the readiness of the winter squash (Honeynut, butternut, Delicata, and autumn frost). Looks like another week or two before they will be ready for market, but the Brussels sprouts (https://www.errenskitchen.com/the-best-brussels-sprouts-of-your-life/) harvesting has begun and we'll have some this week!

The seasons are changing and we still have tons of beautiful round red canner tomatoes if you're looking to preserve. We've also been enjoying them now in cozier recipes like stuffed tomatoes (https://www.allrecipes.com/recipe/21121/stuffed-tomatoes/) or classic tomato soup with grilled cheese.
